About The Position

Big Mamma is a French group of Italian restaurants founded by Victor Lugger and Tigrane Seydoux. Over the past 10 years, they have opened 35 restaurants across Europe and the UAE. Their mission is to share the special atmosphere of the most beautiful Italian traditions, creating unique moments of sharing with their customers. Due to the Group's continuous expansion, for their restaurants in Barcelona, they are looking for a Sous Chef who will become a leader and the Chef of tomorrow.

Responsibilities

  • Participate in the menu change process with the Executive Chefs, contributing to a unique culinary experience.
  • Ensure speed and precision at the pass.
  • Make sure every dish is perfect, respecting the Group's recipes and standards.
  • Act as the Chef's right-hand person in ensuring everything is impeccable: adherence to hygiene standards, well-managed staff, and controls always aligned with objectives.
  • Manage Food Cost like a true leader: zero waste, perfect inventories, punctual orders.
  • Plan, organize, and lead the brigade with energy and precision.
  • Train and mentor your team daily, transmitting passion and professionalism.
  • Build your team: your leadership creates harmony and makes the work environment stimulating and positive.
