About The Position

As a Sous Chef, you will support the successful operation of the Culinary Department within a high-volume corporate dining account at Norwegian in Miami, FL. In this role, you will assist in overseeing daily food production, ensuring quality, consistency, and presentation standards. You will contribute to menu planning and execution, including the development of daily features, and oversee the preparation, cooking, and garnishment of a variety of menu items. This position also includes supervising hourly team members, maintaining food safety and sanitation standards, and supporting inventory management and ordering processes. Working closely with the Executive Chef, you will play a key role in driving culinary innovation, enhancing the guest experience, and delivering a high-quality, efficient dining program. Nice To Haves

  • A.S. or equivalent experience
  • Some progressive culinary/kitchen management experience, depending upon formal degree or training
  • Catering experience preferred
  • High volume, complex foodservice operations experience - highly desirable
  • Institutional and batch cooking experiences helpful
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Must be experienced with computers, including Microsoft Office (Word, Excel, and PowerPoint), Outlook, email, and the Internet
  • Must be willing to participate in client satisfaction programs/activities
  • ServSafe certified - highly desirable

Responsibilities

  • Assists the Executive Chef with managing cost controls and controlling expenditures for the account
  • Assists the Executive Chef with planning and creating menus
  • Produces and executes catering events
  • Rolls out new culinary programs in conjunction with the Company marketing and culinary team
