Handles the administration of all beverage facilities. Completes payroll for the beverage employees, maintains data and handles payroll forecasting. Ensures the enforcement of policy. Maintains all records, reports and critiques concerning beverage services. Takes disciplinary and corrective action on Cocktail Servers when necessary. Meets with the staff on a weekly basis to reiterate policy and evaluate operations. Works with upper management to maximize guest satisfaction and service. Other Duties as assigned.
