About The Position

The Sanitarian is responsible for maintaining compliance with all government, Levy Restaurants, and Compass Group food safety, cleaning, and sanitation requirements. This role provides leadership, training, and oversight for all food handling personnel on property, including culinary, service, and management staff. The Sanitarian is the lead manager responsible for all sanitation oversight personnel and works closely with the stewarding staff to ensure regular cleaning and sanitation of all foodservice equipment and ware. A key aspect of this role is ensuring the maintenance of high grades from county health inspections and internal company and third-party audits (e.g., Everclean).

Requirements

  • Serve-Safe manager level certification
  • Ability to function as exam proctor for ServSafe certification tests for area Levy Restaurant managed properties
  • Ability to follow all required procedures in the event of a suspected food borne illness report or outbreak
  • Ability to collect and handle food samples
  • Ability to conduct employee interviews
  • Ability to prepare all required paperwork
  • Ability to communicate with health department and other government agencies
  • Ability to communicate with internal Levy Restaurants and Compass group personnel
  • Ability to prepare and file regular inspection reports

Responsibilities

  • Maintaining compliance with all government, Levy Restaurants and Compass Group food safety, cleaning and sanitation requirements
  • Providing leadership, training and oversight for all food handling personnel on property including all culinary, service and management
  • Leading sanitation oversight personnel
  • Ensuring regular cleaning and sanitation of all foodservice hand tools and service ware with stewarding staff
  • Ensuring regular cleaning and sanitation of all refrigeration and freezers with stewarding staff
  • Ensuring regular cleaning and sanitation of all hot holding equipment with stewarding staff
  • Ensuring the maintenance of high grades from county health inspections and internal company and third party audits (e.g., Everclean)
  • Performing regular physical audits and inspections of all foodservice and food handling areas of the property (Daily: High volume production areas such as main kitchens, preparation areas and warehouses; Weekly: Remote pantries and food staging areas)
  • Ensuring that all time & temperature logs are filled out
  • Ensuring that all refrigerator and freezer logs are filled out
  • Maintaining a systematic and well-ordered physical history of all required logs in compliance with government and company regulations, ready to present to management and inspectors as required
  • Observing and monitoring staff to ensure proper food handling, sanitation, hand wash and glove use
  • Working with warehouse, purchasing and receiving personnel to ensure that all products received are at the correct temperatures and have been handled according to company policies and government regulations, and communicating all related expectations and requirements to all vendors
  • Formulating training systems and schedules, and providing regular training of all food handling and service personnel to ensure safe food handling, temperature control, and compliance via periodic classes and daily pre-shift topic based discussions
  • Interfacing with the chemical supply company to ensure that the correct sanitation products are purchased, in inventory and being used
  • Maintaining Serve-Safe manager level certification and functioning as exam proctor for ServSafe certification tests for area Levy Restaurant managed properties
  • Following all required procedures in the event of a suspected food borne illness report or outbreak, including reporting, collection and handling of food samples, employee interviews, preparing all required paperwork, and functioning as point person and communicator with all relevant health department and other government agencies, as well as all relevant internal Levy Restaurants and Compass group personnel
  • Preparing and filing regular inspection reports with the Director of Operations and Area Executive Chef
  • Performing other duties as assigned
