Responsible for the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods within an à la carte environment ensuring the efficiency of the line and kitchen operation in accordance with specifications and standards. This role also involves supervising and coordinating activities of cooks and workers engaged in food preparation, collaborating with other personnel to plan and develop recipes and special menus, checking the quality of raw and cooked food products, demonstrating new cooking techniques and equipment to staff, determining food presentation and creating decorative food displays, establishing production schedules and staff requirements, estimating amounts and costs of required supplies, inspecting supplies, equipment, and work areas, instructing cooks and other workers, monitoring sanitation practices, ordering or requisitioning food and other supplies, and recruiting and hiring staff. The position requires maintaining knowledge of current fine dining restaurant trends, following all recipes and specifications, and upholding professional grooming and appearance standards.
