About The Position

The Registered Dietitian reports to the Chief Administrative Officer and is responsible for providing expert advice to facility staff to establish and maintain systems that are effective and efficient to operate the dietary department and to enhance the quality of life of our residents by providing quality nutritional services on a daily basis and assuring that the dietary department is maintained in a clean, safe, and sanitary manner in compliance with federal, state, and local requirements.

Requirements

  • Must possess, a Bachelor’s Degree is Dietetics from an accredited college or university.
  • Possess a current, unencumbered active license to practice as a dietician in the state.
  • Must be knowledgeable of dietary practices and procedures as well as laws, regulations and guidelines governing dietary functions in the long-term care facility.
  • Must have training or 1 - 5 years of previous experience in cost control, food management and dietary therapy.
  • Must possess the ability to deal tactfully with personnel, residents, and family members.
  • Must have knowledge of methods and procedures for serving food, principles of sanitation, and principles of safe food handling.

Responsibilities

  • Develop dietary care plans and assessments.
  • Assess and document the nutritional needs of each resident in accordance with the resident comprehensive assessment and care plan.
  • Assess and document residents’ food allergies and cultural backgrounds that may affect food consumption.
  • Develop a written dietary plan of care that identifies the dietary problems/needs of the resident and the goals to be accomplished for each dietary problem/need identified.
  • Review and plan all regular and therapeutic diets and menus as prescribed by the attending physician.
  • Review residents’ dietary profile, assessment plan, and plan of care for residents triggering related to nutritional status and eating function.
  • Recommend diet changes as appropriate to improve the resident’s nutritional status and eating function.
  • Review and revise care plans and assessments as necessary.
  • Approve all permanent menu substitutions.
  • Ensure that charted dietary progress notes are informative and descriptive of the services provided and of the resident’s response to the service.
  • Respond to oral and written feedback from residents on food quality and service.
  • Maintain a written record of the resident’s complaints and/or grievances that indicate the action taken to resolve the complaint and the current status of the complaint.
  • Provide expert advice and consultation to residents, family members, and Director of Culinary Services.
  • Counsel residents regarding dietary likes and dislikes, appetite, food habits and therapeutic menus.
  • Develop and monitor systems to evaluate effectiveness of dietary department and assure compliance with federal, state, and local requirements.
  • Evaluate food based on nutritional adequacy, method of preparation, taste, appearance, serving temperature and potion size.
  • Assist Director of Culinary Services in adjusting recipes for desired yield.
