About The Position

Bridor North America is seeking a highly skilled R&D Baker Tourier Specialist to join our Research & Development team at our Frozen Laminated Dough Manufacturing Facility in Bridgeport, Connecticut. This is a unique opportunity for a bakery professional who is passionate about laminated dough and thrives in a fast-paced manufacturing environment. Reporting directly to the R&D Director, you will play a key role in developing and improving the premium croissants, Danish pastries, puff pastries, and laminated dough products that help define the Bridor brand across North America. We are looking for more than a baker—we are seeking a true laminated dough expert. The ideal candidate brings deep technical knowledge, hands-on production experience, and a proven track record working with laminated dough products in a commercial or industrial bakery manufacturing environment. This position is not intended for candidates whose experience is limited to retail bakeries, restaurants, hotels, or small artisan operations. Success in this role requires extensive experience producing and troubleshooting laminated dough products at scale and the ability to translate artisan baking expertise into high-volume manufacturing processes.

Requirements

  • Minimum 5 years of hands-on experience producing laminated dough products within a commercial or industrial bakery manufacturing environment.
  • Extensive experience with croissants, Danish pastries, puff pastry, and other laminated dough products.
  • Proven expertise in dough development, lamination, sheeting, butter incorporation, folding, proofing, baking, and product evaluation.
  • Experience supporting product development, process improvement, industrial trials, and manufacturing scale-up activities.
  • Demonstrated ability to troubleshoot product and process challenges in a production environment.
  • Advanced understanding of laminated dough technology and functionality.
  • Strong knowledge of bakery ingredients, dough behavior, fermentation, and process controls.
  • Knowledge of food safety, quality, HACCP, and GMP standards within a food manufacturing environment.

Nice To Haves

  • Experience in frozen laminated dough manufacturing.
  • Experience launching new products from concept through commercial production.
  • Knowledge of FDA and USDA regulations related to food manufacturing.
