About The Position

Under the direction of the Processing Supervisor, this role is responsible for processing all raw and smoked products. This includes completing start-up and shut-down procedures, grinding and blending raw materials, loading and unloading, cooking, recording weights, and assembling processing equipment. The technician will weigh materials according to specific formulations, prepare products for stuffing, and monitor product appearance. Understanding smokehouse operations, adhering to HACCP requirements, and maintaining sanitation standards are crucial. The role also requires observing safety and security standards.

Requirements

  • One to two years’ of food manufacturing experience preferred.
  • Food Handler Certification required (Southside can assist in obtaining this).
  • Ability to understand English for all job-related circumstances.
  • Ability to add, subtract, using whole numbers.
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

Responsibilities

  • Completes all start-up and shut-down procedures for all processing areas.
  • Grinds, blends, and final grinds all raw materials to be used in processing.
  • Loads and unloads, cooks and records weights for smokehouse.
  • Completes required forms and properly applies thermometers and probes.
  • Understands the procedures for hanging smoked meats.
  • Assembles Weiler grinder and mixer/blender on a daily basis for processing.
  • Weighs all materials according to each product specific formulation with no underweights and +1 pound max overweight and documents on each product specific batch card.
  • Weighs spices and water and documents on batch cards according to each ground batch.
  • Understands the mixing and grinding procedure to prepare the product for stuffing.
  • Observes product appearance and changes plate or knives accordingly.
  • Understands smokehouse operations which include start-up, weights and loading of wood, placing of thermometer probes, checking each cycle and documentation.
  • Adheres to all HACCP requirements for all CCP’s and correctly completing all required forms.
  • Washes, scrubs and sanitizes machines and all areas according to sanitation schedule.
  • Observes safety and security standards.
