Under the direction of the Processing Supervisor, this role is responsible for processing all raw and smoked products. This includes completing start-up and shut-down procedures, grinding and blending raw materials, loading and unloading, cooking, and recording weights for the smokehouse. The technician will also complete required forms, apply thermometers and probes, and understand procedures for hanging smoked meats. Daily assembly of the Weiler grinder and mixer/blender is required. Accurate weighing of materials according to specific product formulations, with documentation on batch cards, is essential. The role involves understanding mixing and grinding procedures for product preparation, observing product appearance, and making adjustments to equipment as needed. Smokehouse operations, including start-up, weights, wood loading, probe placement, cycle checks, and documentation, are also key responsibilities. Adherence to all HACCP requirements for CCPs and correct form completion is mandatory. Daily washing, scrubbing, and sanitizing of machines and areas according to the sanitation schedule, as well as observing safety and security standards, are also part of the role.
