The processing lead is responsible for knowing all functions in the breaking room, breaker operation, liquid product filtration and cooling, liquid product storage, liquid product flows and volumes, sanitation procedures and breaking room processing documentation. This role involves overseeing various aspects of egg processing, ensuring adherence to quality standards, and managing a team. The processing lead will also be responsible for knowing all functions in the transfer room, orientor, washer, and candler operations, as well as shell egg product flows and mid-shift sanitation procedures. They will perform various cleaning and setup tasks, including tanker CIPs, pipeline setup, liquid product pumping, and silo CIPs. The role requires strict adherence to written procedures, plant documentation, and USDA/FSIS paperwork. Collaboration with department leads and USDA/FSIS inspectors is essential. The processing lead will recommend improvements to production methods, equipment performance, and product quality, while strictly following all established systems, safety procedures, work instructions, patterns, SOPs, SSOPs, and Good Manufacturing Practices. Key duties include communicating with Transfer Room stakeholders to control egg flow, monitoring all Breaking Room operations and adjusting processes to meet customer specifications, and working with management to adapt to changing schedules. The processing lead is responsible for the daily disassembling, cleaning, sanitizing, and reassembling of processing equipment, as well as post-sanitation inspections. They will monitor crew performance, provide feedback and coaching, report progress and issues to the Processing Manager, and delegate duties to line workers. Other duties as assigned.
