About The Position

The Prep Cook is responsible for preparing ingredients, organizing workstations, and supporting the culinary team to ensure seamless daily operations. Working closely with the Chef de Cuisine, Sous Chefs, and Line Cooks, this position plays a vital role in maintaining the kitchen's commitment to culinary excellence. This position works under the direct supervision of culinary leadership and has no supervisory responsibility. The Prep Cook's authority is limited to the preparation and organization of assigned ingredients and stations; recipe, quality, or food-safety concerns are escalated immediately to a Sous Chef or the Chef de Cuisine.

Requirements

  • Previous prep cook, line cook, or culinary experience in a restaurant, hotel, or hospitality environment preferred.
  • Basic knowledge of food preparation techniques and knife skills.
  • Ability to accurately follow recipes and production schedules.
  • Strong organizational skills and attention to detail.
  • Ability to multitask and work efficiently in a fast-paced kitchen.
  • Strong understanding of food safety, sanitation, and HACCP procedures.
  • Positive attitude and willingness to learn and grow within a chef-driven environment.
  • Professional appearance and commitment to teamwork.
  • Flexible availability, including mornings, evenings, weekends, and holidays.
  • Ability to stand and walk for extended periods throughout the shift.
  • Ability to lift, carry, push, and pull up to 50 pounds safely.
  • Ability to frequently move throughout multiple levels of the restaurant, including going up and down stairs.

Responsibilities

  • Prepare vegetables, meats, seafood, sauces, stocks, dressings, and other ingredients according to established recipes and specifications.
  • Wash, peel, chop, slice, portion, marinate, and prepare ingredients for service.
  • Assist with the preparation of fresh pasta, breads, and other specialty items as directed.
  • Accurately measure and portion ingredients while maintaining recipe consistency.
  • Ensure prep lists are completed accurately and on time.
  • Organize and maintain prep stations throughout each shift.
  • Assist with receiving deliveries and properly storing products.
  • Support Line Cooks and culinary leadership with daily operational needs.
  • Assist with banquet, private dining, and special event preparation as needed.
  • Work collaboratively with all members of the culinary team.
  • Communicate effectively to support efficient kitchen operations.
  • Maintain a clean, organized, and professional workstation.
  • Demonstrate a positive attitude, strong work ethic, and willingness to learn.
  • Follow direction from culinary leadership while contributing to a respectful and team-oriented workplace.
  • Perform additional duties as assigned.
  • Follow all Department of Health regulations and food safety standards.
  • Maintain sanitation, cleanliness, and HACCP procedures throughout each shift.
  • Properly label, date, rotate, and store food products using FIFO (First In, First Out) inventory practices.
  • Ensure proper food handling and temperature control procedures are followed.
  • Maintain a clean, safe, and organized work environment.
  • Report maintenance or equipment concerns promptly.
