About The Position

This position is responsible for supporting the shift supervisor in the kitchen. When the supervisor is off, the lead cook is in charge for the shift. They support all the cooks in their meal preparation using CACFP guidelines. The role involves executing food preparation for meals served for shelters run by Catholic Charities, ensuring knowledge of CACFP food requirements for adults. The Lead Cook works with the Kitchen Supervisor on menu planning, production planning, and food orders. They receive and put away food orders twice a week, assist in meal prep, and monitor the quality, sanitation, and safety of food production. This role also involves working with existing cooking staff to determine timing for kitchen appliance use, understanding and managing portion sizes to minimize waste, and adhering to Catholic Charities’ vision, mission, values, and Code of Ethics. The position requires good stewardship of agency resources, effective teamwork, and participation in staff trainings.

Requirements

  • Institutional and restaurant experience as well as a good working knowledge of all food preparation and production standards including sanitation safety standards.
  • Good working knowledge of all commercial grade kitchen equipment.
  • The ability to be able to function independently and maintain self-sufficiency with minimal supervision.
  • Good interpersonal communication skills, flexibility and willingness to shift priorities as needed.
  • Knowledge of the service population’s cultural and socioeconomic characteristics and the appropriate techniques and practices for the client population.
  • Ability to interact effectively as a team member and independently with Agency staff and with a diverse client base.
  • High school diploma or general education degree (GED); and one to three years related experience and/or training; or equivalent combination of education and experience.
  • Ability to read and comprehend simple instructions, short correspondence, and memos.
  • Ability to write simple correspondence.
  • Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
  • Ability to deal with problems involving several concrete variables in standardized situations.
  • Obtain Serve Safe Certificate within 30 days of hire.
  • Obtain CACFP Food Certificate within 30 days of hire.

Responsibilities

  • Executes food preparation for meals served for shelters run by Catholic Charities.
  • Knowledgeable of CACFP food requirements for adults in all production capacities.
  • Works with Kitchen Supervisor on menu planning with production input.
  • Assists in the planning of production and food orders shelter menus.
  • Receives products from food orders twice a week and assists in putting them away.
  • Assists in meal prep prior to cooking menu items.
  • Assists with food production and presentation of daily menu items for shelters.
  • Monitors that only the highest standard of quality is maintained in the production of the daily meals for Denver shelters.
  • Monitors that all kitchen sanitation and safety regulations are observed at all times.
  • Works with existing cooking staff to determine timing for use of kitchen appliances needed for meal production.
  • Understands portion sizes and creates appropriate portion sizes for all menu items in order to minimize waste and maintains appropriate levels/PARs for each menu item.
