About The Position

About Mason's Meats At our core, we’re more than just a meat snack. We’re not a product, we’re a movement - a return to real food in a world full of chemicals, fillers and artifice. We make premium beef jerky and meat snacks using just two ingredients: the best beef and sea salt. No additives. No sugar. No nonsense. The Role Masons Meats is building a high-quality, high-output meat production operation in Austin. We are hiring a hands-on Plant Manager to lead and own all aspects of our production in Austin. We don't use co-packers. This is the most senior production role in the business, reporting directly to the COO. You will be responsible for running day-to-day operations, building the production team, and ensuring consistent, compliant output as we scale. Note, we won't respond to applications without a covering letter.

Requirements

  • 5+ years in meat processing or food manufacturing
  • Direct experience working in a USDA-inspected facility
  • Hands-on experience with HACCP ownership and compliance
  • Proven ability to hire, train, and lead production teams
  • Comfortable operating on the floor daily — this is a hands-on role
  • Strong problem-solving skills and ability to take full ownership

  • Someone who prefers building and improving systems over maintaining the status quo
  • You'll need a passport to allow for overseas travel

Responsibilities

  • Own all daily production operations and hit output targets
  • Hire, train, and lead a high-performing production team
  • Develop and manage production schedules, labor planning, and workflows
  • Own HACCP plans and ensure full USDA compliance
  • Act as the primary point of contact for USDA inspectors
  • Maintain strong standards in food safety, quality, and sanitation
  • Identify and implement process improvements to increase efficiency and throughput
  • Build systems and structure as the operation scales
