Requirements

  • Three years of experience performing food preparation and/or service for an establishment such as an educational, restaurant, hotel, correctional, military, or medical institute required
  • One year lead experience required
  • SERVSAFEFOOD-ServSafe Food Handle - ANSI - American National Standards Institute required
  • Knowledge of supervisory theories and methods sufficient to be able to perform a variety of supervisory functions
  • Knowledge of food safety techniques and HACCP guidelines. Attention to detail in all documentation.
  • Knowledge of safety hazards and necessary safety precautions sufficient to be able to establish a safe work environment.
  • Knowledge of methods and procedures specific to maintaining sanitary food preparation conditions sufficient to be able to direct, coordinate and participate in the preparation of food.
  • Knowledge of techniques and equipment for preparing food for consumption, including storage/handling techniques.
  • Knowledge of addition, subtraction, multiplication, division, and fractions sufficient to be able to perform mathematical calculations.
  • Skill in prioritizing and coordinating activities to ensure effective and efficient completion of the work assignments.
  • Skill in analyzing and resolving problems related to the work assignment.
  • Skill in professional written and verbal communication and documentation. Establishes effective working relationships with other employees, organizations and the public.
  • Skill in applying the principles of staff development to provide staff training and cross training.
  • Knowledge and computer skills to access and process information. Microsoft Systems

Responsibilities

  • Oversee the operations of patient meal service including but not limited to: scheduling and coordinating assignments of staff to prepare food and beverages, assemble trays, deliver meals, clean and sanitize dishes, take patient meal orders, manage supplement orders and delivery, and maintain quality control and timeliness; conduct patient meal rounds, tray assessments, tray accuracy audits and AIDET audits weekly; resolves problems encountered by employees during the course of the assignment; provide prompt service recovery when there is an error with the patient’s meal or missing items and involve a manager in escalated situations. Orders food and supplies through established processes.
  • Monitor food preparation methods, portion sizes, and garnishing and presentation; ensures food is prepared according to recipes, menus, special dietary or nutritional restrictions, and number of portions to be served. Detects and reports spoiled or unattractive food, defective supplies and equipment or other unusual conditions.
  • Monitor compliance with health and fire regulations regarding food preparation and serving; ensures overall department cleanliness and necessary sanitary levels are maintained throughout the food preparation process. Keep records required by government agencies regarding sanitation or food subsidies.
  • Oversee the management of food supplies and equipment including but not limited to: ordering and purchasing equipment and supplies; arranging for equipment maintenance and repairs, and coordinate a variety of services, such as waste removal and pest control. Maintain food and equipment inventories and keep inventory records.
  • Assist in assessing staffing needs, recruiting, scheduling, mentoring and monitoring the performance of staff.
