The Pastry Sous Chef is responsible for preparing a variety of pastry items, assuming full responsibility for the quality of products served, and ensuring adherence to The Dewberry’s standard portion sizes, quality standards, and kitchen rules, policies, and procedures. This role involves stocking and maintaining sufficient levels of food products at line stations for smooth service, maintaining a clean and sanitary work station, and following proper plate presentation and garnish setup. The Pastry Sous Chef will also handle, store, and rotate products properly, assist with food preparation during off-peak periods, and close the kitchen following the closing checklist for pastry. Additionally, the role requires attending all scheduled employee meetings, contributing suggestions for improvement, and assisting the Pastry Chef with menu planning.
