About The Position

Can Can Brasserie is seeking an experienced Pastry Sous Chef to help lead production and maintain the quality standards that have made Can Can a Richmond institution. This is a hands-on leadership position for someone who loves the craft of baking and pastry while helping develop and support a talented team. You will work in a true scratch bakery and pastry operation, produce breads, croissants, pastries, and desserts from start to finish, help lead one of Richmond's most recognized pastry programs, mentor and support pastry team members, and play a key role in maintaining quality, consistency, and innovation.

Requirements

  • Minimum 4 years of pastry or bakery experience
  • Experience producing: Artisan breads, Croissants and laminated doughs, Pastries, Desserts
  • Strong understanding of baking fundamentals and pastry techniques
  • Ability to work early mornings, weekends, and holidays as needed
  • Strong organizational and communication skills
  • Able to lift 50 lbs and stand for extended periods
  • Minimum 4 years of professional pastry or bakery experience
  • Experience producing artisan breads, croissants, laminated doughs, pastries, and plated or retail desserts
  • Strong understanding of baking science, fermentation, proofing, and pastry production techniques
  • Experience maintaining production schedules and meeting daily volume requirements
  • Ability to consistently execute recipes with precision and attention to detail
  • Knowledge of food safety, sanitation, and kitchen organization best practices
  • Strong time management and multitasking skills
  • Positive attitude and ability to lead by example in a fast-paced environment
  • Commitment to quality, consistency, and continuous improvement
  • Strong communication skills and ability to work collaboratively with culinary leadership and team members

  • Experience training, coaching, and supporting pastry team members preferred

Responsibilities

  • Assist in leading daily pastry and bakery operations
  • Produce artisan breads, croissants, pastries, desserts, and specialty items
  • Ensure recipes and production standards are consistently executed
  • Train and support pastry cooks and bakery team members
  • Maintain production schedules and prep lists
  • Monitor product quality, consistency, and presentation
  • Maintain food safety and sanitation standards
  • Assist with inventory management and ordering
  • Support seasonal menu and dessert development
