About The Position

The Pastry Cook plays an essential role in supporting the pastry team by preparing high‑quality desserts, breads, and specialty pastry items that enhance the overall culinary experience at Live! Casino & Hotel. Working under the guidance of the Executive Pastry Chef and Culinary Director, you will bring creativity, precision, and consistency to every product you craft. Your ability to follow established recipes, execute complex pastry techniques, and maintain strict sanitation and safety standards ensures that each item meets our elevated expectations for quality and presentation. Through your dedication to teamwork, craftsmanship, and continuous learning, you help deliver memorable dessert experiences for both restaurant guests and large‑scale banquet events.

Requirements

  • High school diploma or GED.
  • 2 or more years of experience as a pastry cook, baker, or similar.
  • Must be able to obtain and maintain the necessary license as mandated by the Maryland Lottery and Gaming Control Agency.
  • Standing and moving continuously throughout the shift, often for extended periods.
  • Working in high‑heat environments, including ovens, warm prep spaces, and busy kitchen areas.
  • Lifting, carrying, and transporting ingredients, equipment, and supplies weighing up to 50 pounds.
  • Bending, reaching, twisting, and performing repetitive motions associated with mixing, decorating, and preparing pastries.
  • Utilizing fine motor skills and hand dexterity for detailed pastry work, including decorating, shaping, and finishing items.
  • Safely operating standard pastry and bakery equipment such as mixers, ovens, proofers, sheeters, and small tools.
  • Maintaining visual acuity sufficient to inspect products for quality, precision, and presentation standards.

Nice To Haves

  • Associate degree in baking and pastry arts, or similar preferred.
  • Post-secondary vocational training at a culinary institution would be advantageous.
  • Knowledge of food industry regulations.
  • Advanced knowledge of traditional pastry baking techniques.
  • Creative ability in designing, decorating, and filling confectionery.

Responsibilities

  • Assist Pastry Chef in pastry preparation, production, and presentation activities.
  • Report to Pastry Chef about kitchen and storage equipment repairs, maintenances, and malfunctions.
  • Stock food products in coolers and freezers according to food storage standards.
  • Ensure stock rotation to minimize wastages.
  • Bake artisan and decorative breads.
  • Prepare advanced confectionery.
  • Prepare advanced entremets and tarts.
  • Prepare advanced petit fours and macaroon.
  • Prepare hot and cold desserts.
  • Create cooperative work environment.
  • Demonstrating skill in baking pastries, desserts, cakes, cookies, sweets, and pies.
  • Creating enticing confectionery decorations and delicious pastry fillings, as well as keeping abreast of new pastry baking techniques.
  • Applying classic pastry baking techniques when preparing traditional pastries.
  • Adding novel, creative, and delicious pastry items to the existing selection.
  • Manage pastry station for optimum production and quality.
  • Work cooperatively and professionally with other departments, with respect to the chain of command.
  • Monitor baking progress using specific tools like thermometers or toothpicks.
  • Fulfill essential functions of the position that require extended periods of standing and/or walking.
  • Executing pastry orders for restaurants, catered events and accommodating special requests.
  • Monitoring equipment and ensuring all specialized pastry baking tools are in working order.
  • Maintaining the good running order of specialized pastry baking equipment.
  • Maintain workplace safety and health policies and procedures.
