About The Position

We are seeking an experienced Overnight Pit Cook to manage and operate BBQ pits and smokers during overnight shifts. The ideal candidate will be proficient in preparing meats according to established recipes and quality standards, maintaining precise temperature and smoke levels, and adhering to strict food safety protocols. This role requires effective communication with team members and management to ensure timely preparation of meats for the following day's service and maintaining inventory levels.

Responsibilities

  • Manage and operate BBQ pits and smokers during overnight shifts, ensuring meats are smoked, cooked, and prepared according to established recipes and quality standards.
  • Maintain precise temperature and smoke levels within the pit or smoker, adjusting settings as necessary to achieve optimal flavor, texture, and consistency of BBQ meats.
  • Adhere strictly to food safety and sanitation protocols, ensuring safe handling, storage, and preparation of meats during overnight shifts.
  • Maintain a clean and organized work area to uphold health and safety standards.
  • Communicate effectively with other team members and the management team to coordinate the timing and readiness of BBQ meats for the following day's service.
  • Monitor and maintain the quality of BBQ meats prepared during the night, conducting regular checks to ensure they meet the restaurant's standards.
  • Assist in managing inventory levels to prepare for the day ahead.
  • Complete tasks as requested by the management team.
