About The Position

The Overnight Baker plays a key role in bringing The Buttery’s viennoiserie and pastry program to life each day. Working through the night, this position is responsible for preparing, proofing, and baking products with precision to ensure everything is ready for morning service. Success in this role requires strong time management, attention to detail, and a commitment to quality and consistency. The ideal candidate is dependable, works well in a fast-paced production environment, and takes pride in maintaining a clean, safe, and organized kitchen while collaborating closely with the broader baking team.

Requirements

  • 1+ year of professional baking experience, preferably in bread, viennoiserie, or pastry production.
  • Ability to manage time effectively in a high-volume, fast-paced environment.
  • Excellent attention to detail and a commitment to quality.
  • Flexibility to work early mornings, weekends, and holidays as needed.
  • A team-oriented mindset and willingness to take direction.
  • Effective communication and collaboration skills to work with cross-functional teams.
  • Physical ability to lift up to 50 pounds, stand for extended periods, and perform repetitive tasks.

Nice To Haves

  • Strong understanding of baking processes, including proofing, fermentation, and lamination.

Responsibilities

  • Prepare, proof, and bake pastries and viennoiseries according to recipes and production schedules.
  • Manage time effectively to ensure all baked goods are ready for delivery without compromising quality.
  • Ensure consistency in taste, texture, and presentation across all products.
  • Operate baking equipment safely and maintain a clean, organized, and food-safe workspace.
  • Collaborate with fellow bakers and kitchen staff to meet daily production goals smoothly.
