About The Position

At Four Seasons Private Residences Los Angeles, the Line Cook helps run the day-to-day operation of the station in the kitchen. This role involves assisting in menu creation, preparing dishes according to standard recipes and presentations, and maintaining a high level of quality and organization. The Line Cook will also be responsible for managing inventory, communicating with team members, and responding to resident requests, including special meal preparations. The position requires working independently in a busy environment and contributing to the creation of unique specials while adhering to cost controls and safety procedures.

Requirements

  • Reading, writing and oral proficiency in the English language.
  • High school graduate and an apprenticeship, cooking school or culinary institute education.
  • Highly developed sense of taste and comprehensive sauce preparation skills.
  • Refined plating techniques.
  • Casual dining experience 3+ years.

Responsibilities

  • Assist in creating and preparing menu items and specials.
  • Check and complete mise en place and pars and set-up the station.
  • Complete requisitions, obtain proper signatures and submit to the Purchasing department.
  • Communicate regarding menu items, problem situations or shortages.
  • Utilize the computer system in retrieving orders.
  • Work closely with standard recipes and plate presentations in order to maintain standards of quality in production and presentation.
  • Maintain a good working relationship with other employees, providing instruction and encouragement as needed.
  • Store items properly at the end of the shift.
  • Ensure a clean, neat, and organized work area.
  • Handle and report any accident immediately, no matter how minor.
  • Conduct oneself in a professional manner at all times to reflect the high standards of Four Seasons Hotels and encourage staff to do the same.
  • Respond appropriately to resident requests with respect to special meal preparation or substitutions.
  • Work alone in a busy environment.
  • Create unique, flavorful, and quality specials.
  • Cost recipes.
  • Respond properly in any building emergency or safety situation.
  • Perform other tasks or projects as assigned by department leadership, management, and staff.
