Responsibilities

Scales flour and water by computer.
Manually adds yeast and other required ingredients.
Sets time, closes mixer machine, and starts mixer machine.
Unloads dough onto table or belt when mixing is complete.
Locks Out Tag Out power at the end of the shift and cleans mixer bowl and paddle with scrapper, brush, and wipes.
Brushes down exterior of mixer machines.
Weighs tied pretzels after Fritsch machine.
If machine malfunctions, opens safety cover or door and removes the dough.
Closes all safety coverts and doors, resets, and starts the machine.
Adjusts weights at rolling machine with dial on control panel.
Follows same responsibilities for mixing as dough mixer/ cutter job description.
Records Flour and water amount delivered to mixer.
Follows formulas to specification.
Removes dough from mixer.
Transfers dough using specific tables.
Maintains weights to specification.
Follows GMPs and food safety procedures.
Follows Safety Policies.
Maintains clean and organized work area.
