The Commissary Meat Clerk assists the Raw Production Management team in managing the day-to-day operation of the production needs. Under the direction of the Raw Production Management, fulfill the production orders for the day and conduct any tasks as assigned throughout the day. Assists production management team in the monitoring and executing all compliance documents as per Company’s standards in Personnel and Food Safety, sanitation, and productivity. Ensures picking orders are fulfilled in a timely manner and maintains fulfillment ratios at industry standards or above. Follow strict directive in the execution of his/her hourly schedule and do not deviate unless directed by management team. Works with QA in the implementation of the Food Safety program in the commissary.

Requirements

  • High school graduate or equivalent education.
  • Must be able to operate pallet-wrapping machines.
  • Must have a solid attendance record.
  • Food Handlers Certification
  • Meat Department Safety Certification
  • Must show a calm and professional demeanor while working on a forklift.
  • Must possess strong interpersonal and motivational capabilities.
  • Ability to communicate effectively, both orally and in writing.
  • Must have decision making abilities.
  • Ability to effectively manage time and meet all necessary deadlines.
  • Must understand all safety and legal procedures for handling and receiving goods.
  • Be able to pass a standard drug test and qualify as being drug free under the legal and medical guidelines permitted by the Drug Free Workplace Act of 1988.

Responsibilities

  • Adhere to all local, state, and federal health and civil code regulations; adhere to all state, country and local weights and measure laws.
  • Wear the required PPE, and follow GMP regulations, adhering to Company policies.
  • Responsible for his/her own safety and well-being of all peer associates.
  • Mix ingredients, cut, dice, products as needed in meat production area.
  • Moves product from one location to another in a safe and efficient manner.
  • Wear all equipment safety gear and safety belt as per company’s policies and procedures.
  • Supplies raw materials from storage areas to all production departments and picks up finished goods from production areas and stores them in a safe and efficient manner.
  • Performs all picking, staging, and loading activities to ensure orders are shipped in a timely manner.
  • Code date and rotate all prepared cuts or products placed in temporary storage areas to ensure proper product rotation, quality and freshness.
  • Communicate temperature irregularities to department manager.
  • Ensures that documentation for each load upon completion is completed, signed off, and provides final check lists to Manager or Leads for final issuing of bill of lading and final release of shipment.
  • Ensures full compliance with facility and department safety rules, HACCP, SSOP’s & GMP’s according to Company’s Food Safety guidelines.
  • Maintain good communications with superiors and coworkers throughout the organization.
  • Use and maintain equipment in good working order; immediately advise manager or the key person in charge of any maintenance or equipment problems.
  • Comply with safety policies and procedures and ensure that all department personnel follow as well.
  • Performs the transport handling of all shipments, loading and unloading.
  • Ensures that all raw materials and finished goods are safely stored according to the Company’s Foods Safety standards.
  • Reports immediately to the Supervisor any driving accidents and/or property and material damage.
  • Relieves other forklift associates when taking breaks.
  • Executes the proper and smooth functioning of all picking, storing, shipping, and receiving activities.
  • Assists Warehouse Team in the management of the entire inventory in the warehouse.
  • Follow all necessary documentation and legal procedures for dispatch and receiving goods.
  • Ensure proper labeling, tagging, and packaging of goods and materials.
  • Ensure that the work area is kept clean and in an orderly manner.
  • Follow all company policies and procedures.
  • Adhere to all local and state health and sanitation laws and regulations.
  • Assist with the production of Chorizo
  • Be familiar with department recipes and production procedures
  • Ensure code dating and proper rotation of product
  • Ensure the freshness of the product by ensuring proper refrigeration and temperatures in the department.
  • Perform any other work-related duties as assigned.
