This role will be serving the Prairie Band Potawatomi Nation Food Sovereignty efforts as it pertains to the Meat Processing Facility. The ideal candidate will have strong leadership and business management skills and will be responsible for overseeing all aspects of meat processing, including meat fabrication, packaging, and sales. Must have a deep knowledge of USDA regulations, HACCP systems and good manufacturing practices. Will work with USDA Inspectors and OSHA to ensure compliance, quality control and food safety standards are implemented. Will hire, train, and supervise meat processing staff. Manage departmental budgets and is responsible for revenue and cost projections and tracking. Will analyze data to identify areas for improvement. This work supports the anti-poverty goal of Community Economic Development.
