Responsible for mixing dough by batches by following established formulas using various Mixers. Operates mixers, liquid meters, flour scales. Adjusts formulas according to conditions. Hand scales small ingredients. Loads by hand bulk materials Controls temperature and consistency of the dough. Set –up and changes over equipment Conduct pre-ops Keeps work area clean and orderly, in compliance with GMP standards. Ability to work overtime has been and always will be an Essential Function of this position. Regular and consistent Attendance has been and always will be an Essential Function of this position. Follow all GMP’s, food safety, and quality policies. Ensures all GMP and all Food hygiene and Food safety standards are in compliance. Report all food safety incidents such as GMP violations, ingredient and product contamination, metal detector, screen, or magnet deficiencies, glass breakage, and pest harborage. Ensure compliance in the areas of food defense, food regulations, and product / process quality; provide adequate coaching as needed. Record accurate and legible results on documentation Provide adequate housekeeping at all times.
