About The Position

Resorts World Las Vegas is seeking a Manager, Sanitation and Safety - Food Safety to lead department teams in monitoring and improving Food Safety and Sanitation practices throughout F&B outlets. This role involves conducting audits, implementing corrective actions, reporting on deficiencies, and managing the HACCP program. The position also requires developing action plans for continuous improvement, providing employees with necessary tools and training, managing the stewarding department, and ensuring adherence to company guidelines. The Manager will also maintain industry knowledge and obtain position-specific licensing.

Requirements

  • At least five years’ Food Safety and Sanitation experience.
  • At least three years’ experience in a management or supervisory role.
  • Bachelor’s degree in food science, microbiology, related field from and accredited university.
  • Knowledge of food processing and formulation, quality assurance, and sanitation concepts and techniques.
  • Knowledge of chemical properties of sanitizers.
  • Knowledge OSHA, MSDS, HACCP, SSOP, FSIS, USDA polices and regulations.
  • Knowledge of food processing equipment.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Working knowledge of stewarding and beverage operations.
  • Ability to effectively communicate in English.
  • Polished appearance and demeanor.
  • Ability to obtain & maintain full knowledge and understanding of company and department rules and regulations, policies and procedures.
  • Ability to successfully mentor a team.

Nice To Haves

  • Proficient and fluent in another language (read, write, and speak)?
  • Experience working in a large, luxury resort setting.
  • Experience in large volume operation.
  • Knowledge of union as well as non-union working environments.

Responsibilities

  • Lead department teams in monitoring and improving the Food Safety and Sanitation practices throughout F&B outlets.
  • Conduct formal documented frequent audits to evaluate effectiveness of the various food safety and sanitation process controls being practiced in the outlets, along with cleanliness and pest control maintenance.
  • Create and implement corrective actions in response to any food safety complaints and or observed deficiencies found in the daily auditing of the operation.
  • Make formal reports on all Food Safety related complaints and deficiencies.
  • Conduct Food Safety Inspections with local Health Inspectors, along with outlet Chefs and Stewarding management, to provide Food Safety evaluations and documentation when required.
  • Lead and manage HACCP program which includes all the various meetings, audits, training, exercises, and documentation process reviews.
  • Develop and implement action plans and recommendations for with outlet Executive Chefs and General Managers for continuous improvement in the design and implementation of food safety and sanitation practices in each outlet.
  • Provide employees with the tools, training, and environment they need to deliver their best.
  • Manage the operation of the stewarding department, train employees on proper cleaning methods and operation of equipment and chemicals, based on Material Safety Data Sheets (MSDS).
  • Thoroughly and accurately uses applicable systems (Purchasing Systems, Kronos, HotSOS, etc.)
  • Ensure team members adhere to Resorts World Company guidelines as stated in team member training manual and employee handbook.
  • Use all performance management tools to provide guidance and feedback to team.
  • Promote a cooperative work climate, maximizing productivity and morale.
  • Conduct regular scheduled meetings to ensure lines of communication are open between management and team members.
  • Maintain industry knowledge with trends in the business, like new and advanced cleaning equipment/chemicals that can benefit all.
  • Obtain and maintain position-specific licensing.
  • Use personal device/cellular phone for job related operational tasks, job duties, review of company documents, etc.
  • Other duties as assigned.
