We are looking for an experienced, passionate, and people-first Lead Cook to join our culinary team at the Marriott Colorado Springs. As a Lead Cook, you are one of the most important people on the kitchen floor. You will be responsible for maintaining, setting up, and executing food production and quality control across a range of stations including broiler, saute, grill, and others as needed. You will supervise and assist your fellow kitchen team members during service, help prepare for banquets and special functions, and uphold the food quality and sanitation standards that define the Marriott Colorado Springs culinary experience. This is not a role where you stay in your lane and clock out. This is a role where you lead by example, step into wherever the kitchen needs you, coach your team in real time, and take personal accountability for the quality that comes out of this kitchen every single shift. You will work across the restaurant, room service, banquets, and the employee cafeteria as needed, and you will bring the same level of care and professionalism to every outlet. Requirements

  • A seasoned kitchen professional with a thorough working knowledge of menus, preparation techniques, and culinary standards across multiple stations
  • A natural leader who holds standards without losing their composure and coaches their team with respect and clarity
  • Someone who shows initiative; you anticipate what needs to be done before it becomes a problem and you take care of it
  • The ability to evaluate situations quickly, make sound decisions under pressure, and remain calm and objective when the kitchen gets intense
  • Strong communication skills; you convey information clearly, listen actively, and work effectively with both your kitchen team and front-of-house staff
  • A genuine commitment to food quality, sanitation, and safety standards; you do not cut corners and you do not allow your team to either
  • The ability to work with financial information and basic arithmetic as it relates to food production and cost awareness
  • A friendly, warm, and professional demeanor with guests and associates at all times
  • Reliable attendance and a flexible schedule; kitchen operations require availability that varies based on business needs
  • At least 5 years of progressive culinary experience in a hotel or related field, or a culinary school graduate with at least 2 years of progressive hotel or hospitality experience
  • Previous supervisory or lead experience in a kitchen environment is strongly preferred
  • Food Handler Certification required; can be provided by the hotel if not currently held
  • Strong working knowledge of food safety, sanitation practices, and health department regulations
  • Ability to convey information and ideas clearly and effectively to team members and leadership
  • Ability to evaluate options and make quick, accurate decisions in a fast-paced high-pressure kitchen environment
  • Ability to anticipate needs, prevent problems, and solve issues as they arise without losing composure
  • Ability to assimilate complex information from multiple sources and apply it to meet the needs of the kitchen operation
  • Ability to work with financial information and basic arithmetic as it applies to food production and cost management
  • Must be available to work varying shifts including evenings, weekends, and holidays as required by the business
  • This is a physically active role that requires standing and moving for the full duration of a shift in a high-heat, fast-paced kitchen environment.
  • You should be comfortable lifting and carrying items up to 50 lbs., bending, reaching, and working at a sustained pace throughout service.
  • Physical stamina and comfort with an active, demanding work environment are essential parts of this role.

Responsibilities

  • Maintaining, setting up, and executing food production and quality control for all meat, fish, fowl, sauces, stocks, seasonings, and food items prepared across broiler, saute, grill, and other stations as assigned
  • Ensuring the completion of all necessary food and station preparations prior to the opening of the restaurant, dining outlets, and room service so guests are served promptly and efficiently throughout operating hours
  • Supervising and assisting on the kitchen line during service to maintain the highest standards of efficiency, productivity, and food quality
  • Supporting any station in the kitchen that needs help; you move where the kitchen needs you without being asked
  • Supervising and assisting in food preparation for banquets as required, following Banquet Event Order specifications and ensuring all banquet items are completed on time
  • Coordinating with the Banquet Manager or Supervisor on timing, cover counts, and any changes to event specifications
  • Supervising preparation of food for the employee cafeteria as necessary
  • Ensuring all food is prepared according to Pyramid Global Hospitality standard recipes without exception
  • Maintaining the Clean as You Go policy throughout every shift; taking responsibility for sanitation and cleaning schedules across the kitchen
  • Supervising and assisting with the breakdown of buffets and kitchen line at the end of each meal period, ensuring proper storage of all food and equipment
  • Keeping all storage areas, including the meat locker, storeroom, and walk-ins, neat, orderly, secure, and locked when not in use
  • Assisting in training kitchen staff in the operation and maintenance of all kitchen equipment
  • Contributing to the implementation of culinary training programs to ensure consistency in food preparation across the team
  • Ensuring all team members practice safe work habits at all times to prevent injury to themselves or others
  • Maintaining the employee break room in a clean, neat, and orderly condition
  • Enforcing all hotel policies, house rules, and food safety standards throughout your shift
  • Being familiar with and supporting the hotel’s emergency procedures
  • Approaching all encounters with guests and team members in a friendly, professional, and service-oriented manner
  • Attending meetings as required by management and performing any additional duties as requested by leadership
