About The Position

AHC Hospitality represents a diverse array of hotels, restaurants, and resorts, providing exceptional guest experiences. This role is for a Lead Bartender at Kitchen by Wolfgang Puck. The position involves coordinating bar staff, assisting management with inventories, ordering supplies, developing new recipes, resolving customer complaints, managing cash drawers, and organizing special events. The ideal candidate will effectively manage staff and guest personalities, ensure a high level of service, and uphold the standards of the Amway Grand Plaza Hotel and AHC Hospitality. A teamwork environment and quality service are essential.

Requirements

  • Previous bartending experience in a fine dining or comparable restaurant required.
  • Must have the ability to effectively manage the different personalities of both staff and guests while ensuring a high level of service.
  • Must be TIPS certified.
  • Follow our hotel green policies.
  • Follow AHC and Health Department Specifications.
  • Reports to work on time and rarely misses scheduled shifts. Correctly follow the department attendance policy.
  • Participates in department meetings and communicates freely expressing ideas, opinions or views.
  • Communicates effectively with management and other staff members.
  • Displays a positive courteous and polite attitude, works well with others.
  • Takes pride in their appearance, reports to work in complete uniform, wears proper shoes and socks, and is neatly groomed.

Nice To Haves

  • Experience as a mixologist is a plus.
  • High school diploma or GED preferred.
  • TIPs certification preferred.

Responsibilities

  • Coordinate staff working in the bar.
  • Assist management in maintaining inventories and par levels.
  • Order bar supplies.
  • Develop new recipes.
  • Solve customer complaints.
  • Manage cash drawers.
  • Organize special occasions such as parties and private dining events.
  • Effectively manage the different personalities of both staff and guests while ensuring a high level of service.
  • Follow the expectations of the Amway Grand Plaza Hotel, including, following AHC guest service standards.
  • Create a teamwork environment in the restaurant and produce quality service to each guest.
  • Lead the bartending team.
  • Possess full beverage and cocktail knowledge including garnishment, beer, spirits, and wine.
  • Memorize menu items, their builds, and recipe specifications.
  • Utilize all standard cocktailing and bar techniques, and research new cocktailing trends and techniques.
  • Actively work bar shifts including areas such as service well, bar rail, table service, and food running.
  • Be aware of events in the local area and make recommendations for guests.
  • Generate additional revenue by offering ideas to management and suggestively selling to guests.
  • Display a sense of urgency and the ability to resolve any guest concerns or department issues independently.
  • Strive to exceed guest satisfaction and provide the best possible service by utilizing AHC guest service standards.
  • Utilize time well and be productive throughout the entire shift while meeting department standards.
  • Be TIPS certified and properly card guests who order alcoholic beverages.
  • Follow and maintain all Health Department Specifications.
  • Know the hotel's recycling policy and where to recycle items for the department.
  • Follow the AHC safety standards of The Amway Grand Plaza Hotel.
  • Oversee all bar service area(s) including main bar, patio bar, and private dining mobile bar.
  • Oversee all bar storage area(s) including liquor cage, walk in cooler, and bar cart.
  • Ensure the proper flow of service through the bar area(s) by making sure they are well stocked and set up for success.
  • Maintain restaurant cleanliness and overall deep cleaning of the bar area(s).
  • Maintain daily set up and/or breakdown of all bar areas, including all bar food, beer, spirits, and wine.
  • Complete daily cleaning duties and side work tasks.
  • Keep work area(s) neat and clean, and pick up trash in public and back of the house areas.
  • Participate in the nightly ordering of bar food, beer, spirits, and wine.
  • Oversee and execute the quarterly inventories with the bar staff and management team.
  • Rotate product first in, first out and record/dispose of expired product properly.
  • Monitor bar food and beverage waste while reporting to management.
  • Look for ways to save money by reducing waste and controlling expenses.
  • Effectively communicate to all restaurant staff members and those in leadership roles within the department and the hotel.
  • Share information with all restaurant staff regarding any monthly drink specials or stock issues during pre-shift meetings.
  • Work with department management team on beer, wine, and cocktail menu ideation, creation, and engineering.
  • Lead and train the staff on new cocktails and other beverages including beer and wine.
  • Communicate any needs or areas of concern regarding bar area(s) with management team.
  • Attend department manager meetings.
  • Perform manager closing duties when needed.
