About The Position

This posting outlines several roles within the kitchen and lodge staff. The Kitchen Staff position is a short-term or season-long role as a line cook, supporting the head chef/head cook. The Assistant Head Cook directly supports the head chef/head cook, assisting with kitchen management and menu execution, and may lead staff or close shifts in the head chef/head cook's absence. The Lodge Manager oversees counselor-in-training and staff lodge/dish crews to ensure cleanliness and atmosphere of the lodge and other shared spaces, completing any unfinished work and maintaining the lodge. The Seasonal Head Cook is responsible for running one of the A/U Ranches kitchens during summer programming, including menu planning, execution, and leading a team to provide high-quality food for large groups.

  • Enjoying time in the kitchen supporting food and fellowship.
  • Willingness to take direction and learn new things.
  • Creativity and efficiency.
  • Experience in a kitchen environment and management of kitchen staff.
  • Experience in managing people, thoroughness, cleanliness.
  • Experience in food production for large groups, and/or background in catering or restaurant work.
  • Ability to plan and execute a menu.
  • Ability to run an efficient team.
  • Must be 18 years of age or older.
  • Food Safety Manager Certification required for Seasonal Head Cook.

Nice To Haves

  • Previous kitchen experience is a plus for Kitchen Staff.

Responsibilities

  • Serve as a line cook under the direction of the head chef/head cook.
  • Assist in kitchen management and menu execution.
  • Line out staff or close out a shift in the head chef/head cook’s absence.
  • Manage counselor-in-training and staff lodge/dish crews.
  • Maintain the cleanliness and overall atmosphere of the lodge and other shared spaces.
  • Finish any work not completed by CIT crews.
  • Maintain the lodge in its entirety.
  • Run one of the A/U Ranches kitchens during summer programming.
  • Plan and execute a menu.
  • Run an efficient team that delivers top-notch food quality to groups of up to 200 people.
