About The Position

Big Mamma is a French Italian restaurant group looking for a talented Junior Sous Chef to lead and develop as the Chef of tomorrow at their Birmingham location, La Bellezza. The role involves participating in menu creation, ensuring dish execution, managing operational efficiency including food costs and hygiene, and leading and training the kitchen team to foster a positive and stimulating work environment.

Requirements

Experience as a Junior Sous Chef or similar role.
Strong understanding of culinary techniques and food preparation.
Knowledge of food cost management and inventory control.
Experience in leading and training kitchen staff.
Commitment to maintaining high hygiene and safety standards.
Ability to work effectively in a fast-paced environment.
Passion for Italian cuisine and culinary excellence.

Responsibilities

Participate in the menu change process alongside the Executive Chefs, contributing to a unique culinary experience.
Ensure speed and precision at the pass.
Ensure every dish is perfect, adhering to the Group's recipes and standards.
Act as the Chef’s right hand, ensuring compliance with hygiene standards, a well-organized team, and checks aligned with objectives.
Manage Food Costs: focus on zero waste, flawless inventories, and timely orders.
Plan, organize, and lead the brigade with energy and precision.
Train and support the team daily, sharing passion and professionalism.
Build the team by creating harmony and a stimulating and positive workplace.
