About The Position

You will execute refined, high-volume sauce production within a luxury banquet kitchen where precision, timing, and consistency define every service. As a Banquet Saucier, you are responsible for delivering elevated sauces, stocks, jus, reductions, and emulsions that meet 5-star standards across large-scale events ranging from intimate functions to major banquets. This role requires discipline, technical mastery, and the ability to maintain exceptional quality under high-pressure, fast-paced service conditions while supporting seamless culinary execution.

Requirements

  • 2–5 years of experience in fine dining, luxury hotel, or high-volume banquet kitchen environments.
  • Strong foundation in classical and modern sauce techniques, including stocks, jus, reductions, and emulsions.
  • Proven ability to perform in fast-paced, high-pressure culinary environments.
  • Knowledge of food safety and sanitation standards, including HACCP compliance.
  • Strong organizational, communication, and multitasking skills.

Nice To Haves

  • Culinary degree or equivalent experience preferred.
  • Experience within Forbes 4/5 Star or AAA Diamond-rated properties preferred.

Responsibilities

  • Prepare and execute sauces, stocks, jus, reductions, and emulsions that consistently meet 5-star luxury standards across banquet operations.
  • Ensure flawless consistency and quality during high-volume service ranging from 100 to 2,000+ covers per event.
  • Coordinate timing and execution with the banquet line to deliver synchronized, precise service flow.
  • Scale recipes and production volumes efficiently while preserving flavor integrity and presentation standards.
  • Maintain a clean, organized, and HACCP-compliant workstation in alignment with food safety requirements.
  • Pre-plan mise en place based on Banquet Event Orders (BEOs) to ensure readiness for all service periods.
  • Support execution across multiple simultaneous events with accuracy, speed, and operational awareness.
  • Train and mentor junior culinary team members in classical and modern sauce techniques to elevate overall kitchen performance.
