About The Position

This is a fixed-term instructor position responsible for leading instruction in either the lipid or protein section of FSC 803 – Advanced Food Chemistry, a team-taught graduate-level course. The role involves developing and delivering advanced lectures, coordinating section logistics, facilitating and evaluating student presentations, and contributing to exam development and grading. Michigan State University conducts criminal background checks and professional misconduct reviews for all applicants. Professional misconduct includes, but is not limited to, theft, embezzlement, research integrity issues, discrimination, harassment (including sexual harassment and misconduct), and retaliation. Applicants must disclose any pending investigations or findings related to professional misconduct and sign an authorization and release for employer contact. The existence of professional misconduct history does not automatically disqualify a candidate, but will be assessed for compatibility with the position. This position is planned for recurring basis and is designated as remote-friendly, allowing for remote work as mutually agreed upon.

Requirements

  • Advanced knowledge of lipid chemistry and its applications in food systems.
  • Previous experience teaching advanced lipid chemistry or closely related graduate-level content.
  • Ability to develop and deliver graduate-level instructional materials and assess student learning.
  • Advanced knowledge of protein chemistry and its applications in food systems.
  • Previous experience teaching advanced protein chemistry or closely related graduate-level content.
  • Ability to develop and deliver graduate-level instructional materials and assess student learning.
  • Masters degree in Food science, Human Nutrition, or a related field.
  • Authorization and release for professional misconduct review, including disclosure of any pending investigations, findings, or sanctions related to professional misconduct.

Responsibilities

  • Developing and delivering approximately five weeks of advanced lectures on lipid chemistry (lipid extraction and analysis, oil processing, physical and chemical properties of lipids, lipid modification, lipid oxidation, and antioxidant strategies) OR protein chemistry (amino acids and peptides, protein structure and denaturation, protein quantification, chemical reactions and modification of proteins, and methods for characterizing changes in protein structure).
  • Coordinating the logistics of the assigned section (lipid or protein).
  • Facilitating and evaluating student presentations.
  • Contributing to exam development and grading.
