About The Position

The Restaurant General Manager is responsible for all aspects of managing Sadelle's at Bellagio, an elevated, high-volume breakfast, brunch, and lunch destination known for its exceptional guest experience, upscale dining atmosphere, and premier location on the Las Vegas Strip. This leader provides direction and leadership to the Assistant General Manager, Assistant Manager, and Restaurant Service Team, consistent with MGM Resorts brand standards. The Restaurant General Manager leads the team in achieving the venue's operational and financial goals by driving covers and optimizing reservation channels; monitoring team performance, scheduling, and training; executing initiatives established by property Food & Beverage leadership; maintaining the facility in accordance with MGM Resorts service standards; and ensuring high levels of guest satisfaction through exceptional dining experiences. All duties are performed in accordance with company policies and procedures.

Requirements

• High School Diploma or GED required
• 2+ Years of Prior Relevant Experience required

• Previous experience working in a high-volume restaurant or in a luxury or fine-dining restaurant preferred
• A confident and approachable leader who is comfortable engaging with VIP guests, team members, diverse audiences at all levels, and other business partners in a high-profile hospitality environment
• Highly organized with strong time management and prioritization skills
• Demonstrates exceptional attention to detail across all aspects of the guest and employee experience
• Knowledgeable of Forbes Travel Guide service standards and luxury hospitality best practices
• Previous experience managing employees under a collective bargaining agreement preferred

Responsibilities

• Owns, leads and oversees daily restaurant operations, labor productivity, scheduling, inventory control, guest service standards, and execution and development of marketing strategies to produce both short-term and long-term profitability.
• Co-own (with Executive Chef) the restaurant’s business plan and represent the restaurant in divisional, property or corporate meetings.
• Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the restaurant staff. Owns restaurant’s execution of F&B and/or company-wide initiatives and programs.
• Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Responsible for completion of all company compliance training by the restaurant staff.
• Manages Human Resources responsibilities for Restaurant to include creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company’s diversity commitment
• Champions the company's labor relations philosophy and approach to third-party representation while ensuring compliance with all company policies, applicable employment laws, legal requirements, and collective bargaining agreements
• Interacts with guests frequently to ensure satisfaction and enjoyment of dining experience.
• Reacts to any guest complaints and takes any appropriate action. Manages Restaurant’s guest feedback channels through approved company practices. Collaborate with Executive Chef and culinary team to ensure a seamless service experience between kitchen and dining room.
• Maintains excellent knowledge of venue’s food & beverage products, menu items and equipment used to perform duties.
