About The Position

Merkin Vineyards Hilltop Winery & Trattoria features finely crafted Arizona wines paired with freshly made breads, pasta, wood fired pizzas, salads and more… Our restaurant and tasting room are well-known and well-established and we look forward to adding a talented, dedicated, energized and highly experienced General Manager to our team! The general manager will work with and support ownership to oversee, manage and guide all areas of business operations, administration and service needs on a daily basis. The general manager will conduct business in a manner consistent with and compliant with the company’s standard operating practices and all applicable rules, laws and regulations.

Requirements

  • Experienced leader with a proven track record in managing complex operations, driving significant growth, and demonstrating strong strategic thinking, capable of overseeing all aspects of a business with a focus on profitability and long-term vision; requiring a deep understanding of industry dynamics and a skilled ability to build and motivate high-performing teams.
  • A minimum of ten years of strong management experience in the food and beverage industry.
  • Three professional, relevant, recent references.
  • Certified Food Safety Manager Certificate: Environmental Health Department – Yavapai County.
  • Server Training Certification: Arizona Department of Liquor Licenses and Control

Responsibilities

  • If assigned to a specific job, at a specific time, for a specified range of time, execute all aspects of that position while overseeing additional operations as well.
  • Monitor the satisfaction level of the guests in relation to service standards, food and beverage quality and general comfort. Address any issue which is tied to a guest complaint in a manner that satisfies the guest and is consistent with company’s business mission.
  • Directly or indirectly recruit, hire, train and supervise all employees in all departments.
  • Develop and maintain a work schedule for employees in all departments in a manner that provides proper staffing levels and is within approved budget parameters.
  • At the direction of ownership, and only in an authorized manner, purchase products and services as needed, when approved.
  • Maintain an approved inventory system that allows for proper controls and will lead to data that can be reliably used for the purposes of purchasing, trend analysis and cost measurements (COGS).
  • Directly and indirectly, through support services and staff, consistently adhere to execute cleaning and sanitation standards that meet or exceed the company’s objectives and all other applicable assessments such as the Health Department.
  • Be aware of and ensure that room temperature, lighting levels and sound levels are in accordance with the company’s standards.
  • Be aware of and ensure that all guests are age appropriate in a legally verifiable way. Ensure that all guests are consuming alcoholic beverages in a safe and legal manner.
  • Individually and collectively ensure that all payments received are properly accounted for at the time of the transaction and at the time of reconciliation at the end of a shift.
  • Complete all daily, weekly and monthly operational and financial reports as determined by the company’s ownership.
  • Submit all reports as directed and be prepared to address the information contained within each report.
  • Assist ownership in developing new, interesting and relevant promotional ideas/concepts. Execute and support all aspects of existing promotional programs.
  • At the discretion of and direction of ownership, oversee and manage social media platforms as directed.
  • When applicable, per scheduled shifts, ensure that all operating practices are followed and in place with regard to opening for business and closing for the day.
