About The Position

Operated by the Management & Training Corporation (MTC), the East Texas Treatment Facility in Henderson, Texas, provides a safe and secure work environment for its employees. The Food Services Manager is responsible for the management of food services, including the inmate dining hall and special food services, in compliance with MTC and Texas Department of Criminal Justice (TDCJ) directives.

Requirements

  • Graduation from an accredited senior high school or equivalent or GED.
  • Three (3) years full-time, wage-earning experience in the supervision of employees or inmates.
  • Seventy-two (72) consecutive months of satisfactory active service as a Correctional Officer, supervisor of Correctional Officers, Food Service Manager, or Laundry Manager.
  • Must possess or be able to obtain current valid ServSafe Food Safety certification within twelve (12) months of employment date.
  • Must maintain ServSafe Food Safety certification for continued employment in this position.
  • Valid driver’s license with an acceptable driving record required, unless waived by management.
  • Must successfully complete annual in-service training requirements and pass an annual background check, both of which must be approved by TDCJ.

Responsibilities

  • Supervise designated employees.
  • Manage food services, including the inmate dining hall and special food services, in compliance with MTC and TDCJ directives.
  • Ensure dining, service, and food preparation areas and equipment are maintained in a clean and sanitary manner, complying with sanitation, safety, and health regulations.
  • Provide staff training, evaluate staff performance, and implement organizational and personnel changes as approved by the assistant warden and human resources.
  • Inspect food for quantity, quality, and temperature; assure proper storage and use of inventory; and supervise the monitoring and logging of temperatures.
  • Instruct employees and inmates on safety rules and regulations, proper use of soaps and chemicals (including MSDS), sanitary procedures, food preparation and portion control, and the operation of food service equipment.
  • Advise on food requirements and recipes; calculate monthly, quarterly, semi-annual, and annual food requirements; and prepare and approve requisitions for food items, supplies, and equipment.
  • Prepare daily menus; ensure adequate controls are maintained over food preparation quantities and portion sizes; prepare menus for special diet requirements of inmates; and review cooks’ worksheets for accuracy.
  • Oversee the department budget, ensuring efficient operation within budget; prepare budget reports and reconcile the budget monthly.
  • Plan, assign, and supervise the work of employees and inmates; review employee and inmate work schedules for adequate coverage; establish and administer orientation and departmental in-service training programs for food service staff and inmates.
  • Perform security functions including “pat” and “strip” searches, by squatting and bending to perform such functions.
  • Promote the development of positive social skills through modeling appropriate behaviors and intervening when inappropriate behaviors are observed; provide regular feedback to staff regarding social skills procedures and intervention techniques.
  • Maintain accountability of staff, inmates, and property; adhere to safety practices.
