Under general supervision, performs work of moderate difficulty supervising large volume food preparation. This position requires shift work and weekend work. The role involves hiring and training employees, scheduling, supervising, and evaluating staff, preparing menus that meet nutritional requirements set by a registered dietician, and maintaining compliance with food handling policies and procedures. The position also oversees housekeeping and maintenance, maintains order, safety, and security in the kitchen, and ensures inmate workers comply with work and hygiene standards. Consultation with dieticians, nutritionists, and medical staff for special diets may be required. Essential functions include standing, walking, reaching, working with and around inmates and staff, repetitive motion for food preparation and cleaning, and communication skills for interacting with staff, inmates, and for telephone and overhead paging. The working environment is indoors within the jail and dining hall, with exposure to extreme heat and noise. Hazards include potential for burns from ovens and stovetops. This role involves supervising others.
