The state supported living centers serve people with intellectual and developmental disabilities who are medically fragile or who have behavioral problems. The centers provide campus-based direct services and supports at 13 centers located throughout the state. The Food Service Manager II duties will involve working with the Cooks, Drivers and Food Service Workers to assure recipes, menus, diets along with standards are carried out as well as completing all accompanying reports. Plans, assigns, trains and supervises the work of others. May work extended hours, weekend or holidays. Assure competency-based training for the Food Service Department, training for orientation, annual retraining and in-service programs. Assures all employees within the Department are up to date on continuing educational needs. This position will provide meal monitoring, supervise preparation and serving of meals to ensure proper food handling techniques and sanitation. Assist in the rotating Food Service Manager coverage. This position is under the supervision of the Assistant Director of Food Services and requires minimal supervision to allow for initiative and professional judgement.

Requirements

  • Graduation from a standard senior high school or equivalent is required.
  • Minimum two (2) years’ experience in food service work is required.
  • 6 months of training or supervising other employees is required.
  • Knowledge of food preparation methods, of food storage standards and sanitation regulations.
  • Skill in the operation and sanitizing of food service equipment.
  • Ability to prepare and serve food, to clean dining, serving, and food preparation areas according to facility/department standards, and to maintain accurate records.
  • Ability to speak and read English.
  • Ability to follow written and oral instructions.
  • Ability to use basic math used in cooking/preparation.
  • Ability to lift minimum of 40 pounds.
  • Ability to bend and reach, stand/walk on hard floors for extended periods of time.
  • Ability to work in hot and/or cold conditions.
  • Ability to smell, taste, and see.
  • Ability to work harmoniously and productively with co-workers and residents.
  • Males between the ages of 18 – 25 must be registered with the Selective Service.
  • All applicants must be at least 18 years of age to be considered for employment at a state-operated facility.

Responsibilities

  • Attends work on a regular basis and may be required to work a specific shift schedule or, at times, even a rotating schedule, extended shift and/or overtime in accordance with agency leave policy and performs other duties as assigned.
  • Completes monthly sanitation checks in the Central Kitchen. Monitors sanitation in Central Kitchen and Ingredient Room.
  • Coordinates Food Services staff training on safety rules and regulations, sanitary procedures, food preparation, food textures, portion control, operation of food service equipment using competency-based training. Assures all employees are up to date on annual computer continuing education (I-Learns, Food Handlers and Food Protection Manager Courses, Management Training etc.).
  • Coordinates training regarding dietary interventions with Home Management/Direct Care Staff; Conducts Pre-Service Training for all new facility employees.
  • Ensuring that assigned staff participates in mandatory training in order to ensure staff competence and development.
  • Supervises and observes the setting up of dining rooms for service, supervises the preparation and serving of meals.
  • Ensure dining, serving and food preparation areas are maintained in a clean manner and equipment is properly cleaned and sanitized; Inspects food items for quantity, quality and temperature in all service areas.
  • Assist in purchasing equipment for the department to assure food safety and handling needs are met; assist with time keeping as needed.
  • Assists in receiving groceries from the vendor and checks for accuracy of the delivery as well as inspecting items for quantity, quality and temperature conditions.
  • Instructs/trains staff on recipe interpretation and preparation to ensure adequate controls are maintained over food preparation and portion sizes.
  • Assists in calculating food requirement estimates.
  • Order food and supplies, essential to meet requirements of the Food Service Department.
  • Assists processing food request forms from the homes or other departments for changes in prepared food quantities.
  • Assists in basic/entry level data input in the Computrition program.
  • May assist with time keeping duties.
  • Completes daily, weekly or monthly reports, checklists and logs.
  • Monitoring all vaults and storage areas for temperature controls.
  • Assist in coverage in the absence of Food Service Managers or other personnel.
  • May assist in interviewing process.
  • Will be required to operate a state vehicle(s)
  • Physical condition sufficient to permit standing and walking on tile or concrete floors for long periods of time.
  • Ability to supervise and evaluate employees.
  • Participates in On Call Schedule of Management Team.
  • Ability to stand and walk for long periods of time and the ability.
  • Other duties as assigned include but are not limited to actively participating and/or serving in a supporting role to meet the agency’s obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation. Such participation may require an alternate shift pattern assignment and/or location.
