About The Position

Directly supervises the assistant food service supervisor and indirectly supervises the cooks. Responsible for the management of food services, which includes the cafeteria and special food services in compliance with Management & Training Corporation (MTC) and customer directives.

Requirements

  • High school diploma or GED, technical training in food service operations and four (4) years of experience in food service operations, three (3) of which must be in a supervisory capacity required
  • US Citizenship or Lawful US Permanent Resident required.
  • Valid food handler’s permit is required, if required by the state of Arizona.
  • Must successfully complete preservice training.
  • Valid driver’s license with an acceptable driving record required, unless waived by management.

Nice To Haves

  • Knowledge of nutrition and methods of food cost effectiveness and experience in correction or detention food services are highly desired.

Responsibilities

  • Plan, coordinate and supervise the administrative and food service activities of the department.
  • Provide staff training, evaluate staff performance, and recommend and implement department and personnel changes as approved by the assistant facility administrator and coordinated with the manager, human resources prior to implementation.
  • Assist the assistant facility administrator in the preparation of the departmental budget, monitor and control expenditures.
  • Assist in the development and implementation of new and revised policies and procedures affecting food services.
  • Provide appetizing, nutritious and realistically proportioned meals in a clean, comfortable environment.
  • Ensure quality of production and food purchase requirements. Maintain cost control to stay within budget limitation. Establish quantity of food to be prepared according to the menu and planned number of meals to be served.
  • Conduct inspections of food service areas.
  • Establish and follow tool control procedures for kitchen tools and utensils.
  • Direct the work of detainees assigned to food services area.
  • Supervise preparation of food services for special facility functions.
