Requirements

  • Knowledge of the equipment, procedures and techniques used in food service.
  • Knowledge of food service safety and sanitation procedures.
  • Knowledge of food service purchasing procedures.
  • Knowledge of maintenance requirements of kitchen equipment.
  • Ability to supervise people.
  • Ability to train others in food service procedures and techniques.
  • Ability to plan and make bulk food purchases.
  • Ability to plan and direct food service for large groups of people.
  • Ability to determine work priorities, assign work, and ensure proper completion of work assignments.
  • Ability to communicate effectively.
  • Ability to establish and maintain effective working relationships with others.
  • Minimum of one (1) year of experience supervising food service operations and staff.
  • Currently have ServSafe Manager Certification from the State of Florida or ability to earn it within 6 months after hired.

Responsibilities

  • Responsible for total service of food production in Central Kitchen and Central Forensics; provides on the job training, motivation, communication, planning and directing their work.
  • Checks menu and production sheets and assures all food is on the line or in backup position. Schedules personnel to cover all food service functions and tray-lines.
  • Responsible for assuring the appetizing appearance, palatability and proper serving temperatures and retention of nutritional value of foods, maintains adequate food supply for serving lines at kitchen and forensics.
  • Records temperature of all foods during meal service; maintains temperature standards and takes action if necessary. Assures standardized recipes are followed.
  • Responsible for daily sanitation, safety, personal hygiene, cleaning materials, and food service supplies of production staff.
  • Does daily inspections and records same.
  • Supervises proper disposal and / or uses of all food from tray line.
  • Instructs employees on safe operation of equipment. Supervises care and maintenance of heavy-duty kitchen equipment. Demonstrates personally and maintains that each employee practices safe and sanitary procedures; FSH and Food Service Department, at all times.
  • Corrects unsafe / unsanitary conditions immediately. Reports all faulty equipment to Vocational Training Supervisor I.
  • Develops and implements sanitation and preventative maintenance programs. Assures employees practice sanitary procedures at all times.
  • Prepares daily inspections, and assures each record is corrected as needed.
  • Conducts and attends scheduled in-services and Manager’s meeting. Ensures staff understanding of material covered.
  • Participates in Quality Assurance and menu planning. Relieves Assistant Food Service Director and assumes all duties when Assistant is absent.
  • Performs other related duties.
