About The Position

The F&B Manager – Lucky Dragon Noodle Bar is responsible for all aspects of leading and directing the front-of-the-house team to deliver AAA Four Diamond level service. The ideal candidate will have a deep understanding of various Asian cuisines while showcasing a thorough understanding of these Asian cultures. Responsibilities include overseeing the performance and coordination of all work performed by the Lucky Dragon Noodle Bar Team Members. This role requires effective leadership skills, creativity, attention to detail, and a passion for delivering an exceptional dining experience.

Requirements

  • Must be 21 or older.
  • High School Diploma or GED required.
  • Proven experience as a Manager of Asian Cuisine (Vietnamese, Chinese, Japanese, Korean and/or other regional cuisine).
  • At least five (5) years of food and beverage service experience in a fast-paced, specialty retail restaurant required. Casual and Fine Dining service styles preferred.
  • At least three (3) years as a restaurant General Manager or five (5) years as a restaurant Assistant General Manager having full P&L responsibility required.
  • Ability to speak, write, and communicate in English and either Vietnamese or a common dialect of Chinese is preferred.
  • Comprehensive understanding of Asian food, wine, spirits, and beverage knowledge with some culinary background or experience preferred.
  • Comprehensive administrative knowledge, which includes profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation required.
  • Demonstrated ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Demonstrated ability to control operational costs and improve financial results.
  • Demonstrates a high proficiency in written business communications to effectively present data and analyses for operational improvements.
  • Must demonstrate sound judgment and maturity in his or her decision-making ability, even when dealing with difficult situations.
  • Must possess and demonstrate strong leadership skills and ability that will enhance and exemplify Gun Lake Casino Resort’s “Unsurpassed” Service Standards.
  • Must hold/maintain certification with handling (ServSafe) and Alcohol Awareness (TIPS) and the ability to gain/maintain training requirements from both programs.
  • Availability and willingness to work extended hours including nights, weekends, and holidays as business requires.
  • Must be able to obtain a gaming license with the Gun Lake Tribal Gaming Commission.
  • Demonstrated ability to work independently with minimal direction.
  • Conduct group and individual training regarding policies and procedures on an ongoing basis. Set daily, weekly, and monthly goals and opportunities and lead the unit to achieve the desired result.
  • Communicate consistently with all managers, keeping them abreast of all department activities.
  • Ensure that all Team Members adhere to all policies and procedures set forth by the department.
  • Responsible for maintaining cleanliness and sanitation standards in accordance with department policies and the Department of Health.
  • Ensure that the restaurant and equipment are in good working order to ensure a clean and hazard-free work area that complies with the Department of Health, OSHA and Gun Lake Casino’s guidelines. Monitor, work with facilities, and document if any area is below standards or not functioning properly.

Responsibilities

  • Set clear expectations and provide ongoing training to ensure Team Members deliver exceptional experiences.
  • Teach and train the proper steps of service ensuring consistency in delivery. Foster a positive work environment that encourages teamwork and professional growth.
  • Oversee all aspects of daily restaurant operations, including opening and closing procedures, staff scheduling, and inventory management.
  • Implement and enforce health and safety standards to maintain a clean and safe environment for guests and staff. Monitor food quality, presentation, and portion control to ensure consistency and guest satisfaction.
  • Responsible for practicing, supporting, and promoting Gun Lake Casino Resort’s “Unsurpassed Service” and AAA Four Diamond service standards at all times.
  • Maintain a strong knowledge of the menu offerings, including ingredients and preparation methods, to assist guests with menu selections and accommodate special requests. Interact with guests to ensure an outstanding dining experience and promptly address any concerns or feedback
  • Work closely with the marketing team to develop and implement marketing strategies to attract new guests and retain existing ones.
  • Monitor and manage restaurant expenses, including food, beverage, supplies, and labor costs, to maximize profitability while maintaining high-quality standards. Analyze sales reports and P&L’s to identify opportunities for revenue growth and cost-savings initiatives. Implement pricing strategies and promotions to drive sales and increase customer loyalty.
  • Ensure compliance with Serve-Safe food safety and sanitation regulations, maintaining a clean and organized kitchen environment.
  • Collaborate with the culinary team to understand guest preferences, receive feedback, and adjust to enhance the overall dining experience.
  • Responsible for handling any Team Member or Guest opportunities.
  • Evaluate, oversee, and provide coaching opportunities regarding job performance of Team Members.
  • Ensure that all Team Members are knowledgeable of and adhere to all Gun Lake Casino Resort’s Standards, policies, and procedures for the department.
  • Responsible for participating in the creation of annual budgets and managing and leading the unit in all forecasting and cost controls to meet or exceed unit operating financial potentials and goals.
  • All other duties as assigned.
