About The Position

The F&B Manager is responsible for directing and managing the work assignments of assigned personnel, including administrative duties related to recruiting, staffing, and scheduling. This role involves developing and implementing training initiatives, providing coaching and counseling, and coordinating promotions, specials, and activities. The manager will also oversee special events, ensure superior food quality and proper sanitation, and maintain budgeted food and labor costs. Key responsibilities include managing food and beverage storage and rotation, ensuring proper food preparation and service, enforcing safety procedures, and developing systems to enhance service levels and control expenses. The position requires adherence to state and federal liquor regulations and providing excellent customer service reflecting the company's S.T.A.R. culture. Additionally, the F&B Manager must report any violations of internal controls or gaming regulations to the appropriate authorities.

Requirements

  • Minimum 2 years experience in a high volume food and beverage service environment.
  • Proven experience in kitchen operations, purchasing and inspection of food products, planning and scheduling and administration of personnel.
  • High school diploma or equivalent.
  • Able to wear sanitary gloves when directly handling food.
  • Ability to lift 50 lbs.
  • Ability to communicate effectively with others.
  • Able to comprehend, adhere and enforce compliance with company and departmental rules and regulations.
  • Able to multi-task and operate in a fast-paced environment.
  • Indiana Gaming Commission Occupational License - Level 3
  • Indiana Alcohol Beverage Permit.
  • Obtain/maintain company mandated alcohol awareness certifications.
  • Ability to perform basic computing and accounting skills.

Responsibilities

  • Directs and manages the work assignments of assigned personnel.
  • Performs administrative duties associated with recruiting and staffing for positions.
  • Coordinates, develops and provides work schedules to meet staffing needs.
  • Develops, implements and assists with personnel training initiatives.
  • Performs coaching and counseling of assigned personnel.
  • Initiates, develops, builds and coordinates the promotion of specials and activities.
  • Coordinates special events and functions with other departments and agencies.
  • Coordinates, inspects and maintains a superior food quality.
  • Maintains a budgeted food cost and labor cost.
  • Maintains proper storage and rotation of food and beverage items.
  • Assures food is properly prepared, held and served.
  • Maintains and enforces proper sanitation policies.
  • Demonstrates knowledge and enforces safety procedures.
  • Develops controls, procedures and systems to enhance service levels and maintain those levels to increase average checks and to control expenses.
  • Abides by State, Federal, and corporate liquor regulations pertaining to alcoholic beverage service to minors and potentially intoxicated guests.
  • Provide service to internal and external customers which reflects the company culture of Satisfaction, Togetherness, Appreciation and Recognition. (S.T.A.R.).
  • Responsible for immediately informing on-site IGC Agent on duty, Security and Supervisor on Duty of any Internal Control or State Regulation violations related to gaming activity of which you commit, witness or become aware; must report pursuant to company Self-Reporting Policy.
  • Performs miscellaneous duties as assigned.
