The Executive Chef is responsible for the day-to-day operation of the kitchen and has complete responsibility for the kitchen in its entirety. This role involves developing and implementing procedures to ensure all work practices meet or exceed established standards, communicating daily with the General Manager, and maintaining high standards for food quality, presentation, handling, sanitation, and safety. The Executive Chef will also assist in the selection, supervision, training, development, scheduling, evaluating, disciplining, and counseling of staff, while demonstrating positive leadership characteristics. This position requires monitoring food and labor costs, conducting daily walk-throughs of kitchen areas, utilizing specification sheets for preparation, preparing and managing new menu items, and ensuring attractive, consistent presentations of food. The Executive Chef will also interact with and supervise line cooks, handle customer requests, maintain and clean food preparation areas, and be responsible for all opening and closing kitchen procedures.
