The Executive Chef is responsible for managing all operational functions of the Culinary aspects within the Unit’s operation. This includes interviewing, hiring, evaluating, and coaching kitchen personnel, developing culinary training programs, and ensuring safety training is completed. The role involves directing and coordinating the work of production and dish room staff, maintaining a clean and safe work environment, and upholding company policies. The Executive Chef will supervise period-end inventory, direct food preparation, monitor cooking and holding temperatures, and establish maintenance schedules for equipment. They will also be responsible for planning menus, evaluating food quality, implementing sanitary practices, and ensuring compliance with health and safety regulations. Financial management is key, including controlling food costs, managing payroll and controllable profit, and setting staff levels according to budget and business forecasts. The role also emphasizes incorporating sustainable resources and promoting an inclusive and supportive approach within the team and community.
