About The Position

Restaurant Associates, a leading provider of dining and event catering for prestigious institutions, is seeking an Executive Chef (EC). The EC is a multi-unit culinary leader responsible for the overall success of multi-unit café operations, ensuring the delivery of a dynamic and innovative Food Program. This role involves close collaboration with various support teams including Regional Executive Chef, Food and Workplace Safety, Finance, Vendor Relations, Human Resources, Learning & Development, IT, Sustainability, Nutrition, Equipment Maintenance and Repair, Marketing, Communication, and Engagement. The Executive Chef acts as an ambassador for the Food Program.

Requirements

  • Degree from an accredited culinary institution preferred, or equivalent work experience
  • Minimum of 4 years’ culinary supervisory experience in a similar high-volume, quality food service establishment
  • Highly developed culinary skills with comfort in traditional, modern, and multi-ethnic cuisines
  • Ability to create new, innovating, and exciting dishes within guidelines of the food program
  • Proven track record in leadership, including coaching and teaching skills with individuals and teams
  • Ability to proactively solve problems and work independently and/or in teams effectively and efficiently with limited supervision
  • Proven ability to manage budgets, utilize reporting platforms, and meet financial goals
  • Ability to effectively communicate, motivate, and interact with all levels within the organization
  • Proficient in computer and technical skills, working knowledge of Google Suite programs
  • Ability to maintain confidentiality

Responsibilities

  • Lead café teams to deliver operational and administrative excellence, including high-quality meals, engaging guest experiences, talent development, workplace and food safety management, financial management, and associate engagement.
  • Act as a role model, inspiring and mentoring culinary teams to deliver well-run operations with delicious food served hospitably and efficiently.
  • Drive positive change through strategy and process improvement, holding teams accountable for accurate and high-quality work.
  • Encourage and support culinary associate development through personalized L&D targets, performance reviews, coaching, and performance improvement plans.
  • Drive associate participation in job-related training and cultivate an inclusive, diverse team culture.
  • Guide the onboarding process and support HR in the interview process.
  • Direct teams to meet and exceed Core Performance Expectations (CPEs) and deliver the expected value of the food program.
  • Ensure compliance with all client and Compass Group programs, procedures, systems, principles, and philosophies.
  • Create balanced cycle menus that meet cultural and dietary needs across multiple cafés.
  • Oversee pre- and post-food production and processes, ensuring cafés use recipes for high-quality meals.
  • Monitor café teams to perform daily TASTE procedures and protocols.
  • Ensure all food served is appropriately described, including allergies and sensitivities.
  • Lead teams in efficiency and accuracy with Mobius and Webrition, and ensure effective 'Daily Tens' meetings.
  • Coordinate work efforts with other teams, employees, and departments.
  • Support the development and implementation of new concepts, programs, recipe development, and standard operating procedures.
  • Provide catering, café, and new builds/renovation support as needed.
  • Report and collaborate with equipment repair and maintenance.
  • Ensure teams work within budget, managing labor, food, and operation costs.
  • Maximize the use of Compass Group and client tools and systems for optimal performance.
  • Lead café teams in proper ordering and sourcing of local and seasonal foods.
  • Create work efficiencies and leverage GPAK integration for cost savings.
  • Contribute to quarterly equipment replacement needs (CAPEX).
  • Ensure workplace safety standards are consistently met and all related procedures are followed.
  • Collaborate with Workplace Safety Manager on program adherence, training, and enhancements.
  • Ensure food safety standards are consistently met, including error-free allergen management.
  • Collaborate with Food Safety Manager on program adherence, training, and enhancements.
  • Report injury, accident, and/or foodborne illness incidents accurately and in a timely manner.
