The Executive Chef is responsible for managing all operational functions of the Culinary aspects within the Unit’s operation. This includes interviewing, hiring, evaluating, and coaching kitchen personnel, developing culinary training programs, and ensuring safety training is completed. The role involves directing and coordinating the work of production and dish room staff, maintaining a clean and safe work environment, and upholding company policies. The Executive Chef will also supervise inventory, prepare and display menu items, monitor cooking temperatures, establish maintenance schedules for equipment, and ensure overall consistency and high quality across operations. Menu planning based on market trends, customer preferences, and nutritional considerations, along with recipe design and portion control, are key responsibilities. The role requires inspecting all locations for food quality, service, appearance, and sanitation, placing food product orders, evaluating raw food quality, and implementing sanitary practices. Compliance with all food safety and health regulations is mandatory. The Executive Chef will process invoices, manage food costs within purchasing specifications, control waste, and prepare operational reports. Analyzing sales and inventory to maximize opportunities, managing payroll and controllable profit, and setting appropriate staff levels are also critical. The role involves promoting sustainable resources in culinary selections, fostering an inclusive and supportive approach, and supporting community efforts through hiring and engagement activities. Other tasks as deemed necessary will also be performed.
