This role is responsible for planning and scheduling manpower, equipment, and supply requirements for the department, while maintaining accountability for cost, utilization, and performance. The Executive Banquet Chef is responsible for hiring, training, and ensuring the proficiency of kitchen employees. This position involves preparing and producing menu items, overseeing garnishing and portion control, and developing a diverse, high-quality menu that changes seasonally and responds to membership desires. The chef will instruct cooks and dishwashers on preparation and sanitation standards, ensuring high levels of cleanliness throughout the kitchen and dumpster area. They will also maintain preventative equipment maintenance procedures, develop a rapport with club membership through direct interaction, and collaborate with the Director of Culinary Arts and front-of-house manager to develop club and private function business. Maintaining high sanitation standards set by the Health Department and daily logs for breakage, spoiling, and refrigeration temperatures are also key responsibilities. Financially, the Executive Banquet Chef assists the Executive Chef with the annual food and beverage budget, maintains internal controls, payroll policies, purchase order systems, par-stock levels, and ordering/receiving programs. They are responsible for sales, expenses, and profit goals as outlined in the operating budget and must adhere to all Reynolds guidelines, policies, and standards, including attending training seminars and manager meetings.
