About The Position
Central Kitchen Dough Production: At Old Scratch Pizza, our Dough Production team members play a critical role in producing the foundation of everything we serve. Every batch of dough that goes out to our restaurants starts here. This role is focused, hands-on, and essential in ensuring our dough is consistently made to spec, properly handled, and ready to support daily operations across all locations. Whether you bring production experience or are ready to learn, this role offers the opportunity to develop a specialized skill in a structured, team-driven kitchen environment. - Physical ability to stand for extended periods and lift up to 50-100 pounds
- Exposure to high temperatures and cold conditions in walk-ins
- Frequent contact with water, flour, sanitation solutions, and common allergens (gluten, dairy, etc.)
- Extended standing and walking
- Bending, stooping, and lifting up to 50-100 pounds
- Repetitive wrist, hand, and finger motion
- Use of mixers and production equipment requiring manual dexterity
- Ability to communicate clearly and maintain awareness of surroundings for safety

Responsibilities
- Prepare and produce dough according to established recipes, standards, and weekly production schedules
- Execute both regular and gluten-free dough production on designated days
- Ensure all dough meets quality, consistency, and fermentation standards
- Break down, clean, and sanitize mixers and all dough-related equipment after use
- Maintain cleanliness and organization of all dough production areas
- Work closely with the delivery driver to ensure proper quantities are ready for daily and weekly distribution
- Communicate production levels, timing, and needs to support restaurant operations
- Follow all food safety and sanitation procedures
