About The Position

The Director of Front of House Operations is a senior hospitality leader responsible for driving revenue growth, brand excellence, and operational consistency across At La Madre Canyon Grill the role sets the strategic vision for guest experience, cultivates a high-performance culture, and translates company objectives into measurable results at the venue level. Serving as the primary operational leader between the Vice President of Beverage and the General Manager, the Director ensures that La Madre Performs — financially, operationally, and experientially. This is an externally visible, high-impact role that demands an entrepreneurial mindset, a passion for hospitality, and a proven track record of scaling revenue and developing exceptional teams across multi-unit environments.

Requirements

  • Minimum 5–7 years of progressive leadership experience in upscale or high-volume restaurant/hospitality operations, with at least 2 years in a multi-unit oversight role.
  • Demonstrated track record of driving significant revenue growth and exceeding financial targets across multiple venues.
  • Deep expertise in P&L management, labor optimization, and operational cost controls.
  • Exceptional leadership and team development skills with the ability to inspire and align large, diverse teams.
  • Strong analytical acumen — comfortable working with data to inform strategy and present findings to senior leadership.
  • Outstanding interpersonal and communication skills; able to build relationships and influence at all levels of the organization.
  • Current Food Safety Manager Card, TAM Card, and Sheriff Non-Gaming Card (or ability to obtain upon hire).
  • Ability to work a flexible schedule including evenings, weekends, and holidays.

Responsibilities

  • Own and drive top-line revenue performance across La Madre Canyon Grill, setting aggressive but achievable sales targets in partnership with the VP of Beverage.
  • Develop and execute strategies to grow average check, table turn efficiency, private dining, and ancillary revenue streams.
  • Analyze sales trends, market data, and competitive landscape to identify growth opportunities and respond to shifts in guest behavior.
  • Build programming, promotions, and experiences that drive traffic and increase spend per cover.
  • Champion upselling and revenue-building behaviors at the GM and service team level through training, incentives, and accountability.
  • Lead weekly revenue reviews presenting insights and action plans to the VP of Beverage.
  • Own the full P&L for FOH operations, including revenue, labor, controllable costs, and EBITDA contribution.
  • Partner with GM on budget creation, forecasting, and variance analysis, ensuring venue meets or exceeds financial targets.
  • Implement labor management strategies that optimize staffing levels relative to volume without compromising guest experience.
  • Monitor and control costs with a systems-driven approach to purchasing, inventory, and overhead management.
  • Present financial performance summaries and strategic recommendations to the VP of Beverage on a regular cadence.
  • Set the standard for an exceptional, memorable guest experience and hold teams accountable to that standard.
  • Leverage guest feedback, online reputation data (Yelp, TripAdvisor, Google), and operational metrics to continuously elevate the dining experience.
  • Resolve escalated guest relations issues with professionalism, urgency, and a guest-first mindset.
  • Ensure all service sequences, hospitality standards, and brand touchpoints are executed with precision and consistency.
  • Champion a culture of genuine hospitality — where every guest interaction is an opportunity to create loyalty.
  • Recruit, develop, and retain top-tier General Managers and FOH talent aligned with the company's culture and values.
  • Build and sustain a pipeline of internal talent through mentorship, structured development programs, and succession planning.
  • Coach General Manager to lead their teams with confidence, clarity, and accountability — elevating leadership capability across the organization.
  • Foster an inclusive, high-performance culture where team members are inspired to grow, take ownership, and deliver excellence.
  • Conduct formal performance evaluations for all direct reports and contribute to compensation recommendations.
  • Serve as the primary liaison between FOH operations and culinary, beverage, marketing, and finance leadership teams.
  • Collaborate with the VP of Food and the VP of Beverage on menu development, beverage programming, and seasonal offerings to maximize guest appeal and revenue.
  • Partner with HR on staffing strategy, organizational design, and employee relations.
  • Represent FOH operations in leadership meetings, contributing strategic perspective and operational insight to company-wide initiatives.
  • Monitor competitive landscape and industry trends to keep the organization ahead of the curve on guest expectations and market positioning.
