The Director of Food and Beverage is responsible for planning, designing, implementing, and controlling Food and Beverage operations to ensure profitability, efficient operations, and adherence to established standards. This role involves establishing and maintaining standards for food and beverage quality, presentation, handling, sanitation, and safety, in alignment with property standards and applicable regulations. The Director will develop and implement policies and procedures, participate in the preparation of the annual operating budget and financial plans, and establish and maintain budgeted supply and labor costs. They will conduct industry research to project future trends, work with the Executive Chef on menu planning and pricing, and ensure the security of all Food & Beverage supplies, equipment, and inventory. This position requires regular communication with all departments, frequent inspections of dining, kitchen, and storage areas, and immediate reporting of unsafe conditions. The Director will also participate in the property’s Manager on Duty program, ensure timely follow-through on requests, and select, supervise, train, develop, schedule, discipline, and counsel staff, demonstrating positive leadership characteristics. They will provide timely formal assessments of team members and perform in the capacity of any supervised position as needed, conducting training on job standards.
