About The Position

Silver Dollar City is opening its first-ever resort, a six-story, 262-room craftsman-style retreat overlooking the Ozark Mountains and Table Rock Lake. This resort offers guests priority access to the park and nearby attractions, and is part of a significant investment to enhance the Branson experience. This is a unique opportunity to play a foundational role in shaping how families experience the Ozarks for generations to come, working with a mission-driven team. Reporting to the General Manager, the Director of Food & Beverage will provide strategic vision, leadership, and supervision to the Food and Beverage teams. This role involves monitoring sales, cost of goods, labor, and inventory to identify trends and make business decisions that ensure profitability goals are met. The Director will also ensure that teams deliver outstanding service and exceptional culinary and service experiences to guests and hosts, aligning with the objectives of Herschend Family Entertainment, Silver Dollar City, and Silver Dollar City Resort.

Requirements

  • Minimum seven (7) years of senior-level leadership experience in multi-site food and beverage venues with no less than $8M in annual gross sales required.
  • Extensive experience in restaurant bar, banquet/catering, in-room dining, and kitchen management required.
  • Proven track record with leading-edge methods of revenue growth in a large business environment required.
  • Advanced knowledge of culinary best practices for the hospitality industry.
  • Ability to obtain any government required licenses or certifications, e.g. TiPS, Serve Safe Certification, ServSafe Food Protection Manager, Allertrain Allergen Awareness, CPR/First Aid, Food Handler’s permit required in the state, county, and/or city where employed.

  • Must possess strong communication, listening, facilitation, and problem-solving skills, computer skills, and financial acumen.

Nice To Haves

  • Experience in rapid growth organizations preferred.
  • Degree in Business, Hospitality or Culinary preferred. Extensive practical experience would be considered in lieu of educational degrees.

Responsibilities

  • Directing and organizing the activities of the Food and Beverage departments to ensure brand standards and a safe, high-quality food and beverage product are consistently met while achieving budgeted revenue, cost, and profit goals.
  • Building strong relationships and collaborating with the Property Support Center, Silver Dollar City, other Herschend Family Entertainment properties, vendors, sponsors, and partner teams to ensure company expectations are achieved.
  • Overseeing menu concept and development/engineering process alongside key stakeholders, including consultant groups, corporate F&B leadership, VP Operations, and the General Manager.
  • Managing all of the resort's Food and Beverage outlets, including banquets and catering.
  • Demonstrating strong knowledge of current food and beverage industry trends and championing the development and implementation of new and creative food concepts.
  • Ensuring a positive work environment for all hosts, fostering high levels of engagement and job satisfaction.
  • Ensuring high levels of customer service at all touch points, exceeding brand standards and guest expectations to achieve high Net Promoter Scores (NPS), customer loyalty, referrals, and repeat business.
  • Complying with all federal, state, local, and company regulations, policies, and procedures.
  • Leading safety efforts for the F&B organization, including health department and Steritech inspections, audits, food handling and storage, responsible beverage training, and safety training.
  • Planning and directing the functions of administration and planning of the Food and Beverage organization to meet daily operational needs.
  • Engaging guests creatively and capturing demand to improve revenues and average check.
  • Serving as a subject matter expert for Point of Sale and back-of-house management software (CrunchTime).
  • Working closely with Property Support Center Procurement Leadership and approved vendors to ensure efficient and accurate projections and orders, and adherence to procurement policies.
  • Developing and overseeing financial budgets to support business plans.
  • Managing P&L, business planning, capital projects, budgeting, and forecasting activities.
  • Implementing effective controls of food, beverage, and labor costs across all areas of responsibility.
  • Ensuring all period-end inventories are completed and accurate.
  • Reviewing period profit and loss statements, participating in P&L meetings, and preparing action plans for improvement.
  • Developing and executing action plans to address business shortfalls.
  • Delegating responsibility and authority for the operation of various food and beverage outlets and BOH areas.
  • Partnering with the HR team for staff recruiting, interviewing, and hiring.
  • Managing the performance of direct reports through leadership, motivation, mentoring, coaching, and providing feedback, and collaborating on professional development plans.
  • Developing, implementing, and monitoring effective host training programs to promote growth and strong bench development.
  • Developing, implementing, and monitoring department schedules to meet customer demand while achieving productivity goals.
  • Establishing an environment where hosts are empowered to provide excellent customer service.
  • Collaborating with culinary and restaurant outlet teams on menu development, food presentation, and service delivery.
  • Collaborating with all direct reports on departmental operations.
  • Partnering with Finance, Accounting, and IT leadership to resolve operational issues.
  • Scheduling and meeting regularly with Food and Beverage teams to review performance and share information.
  • Resolving guest concerns to ensure complete satisfaction.
  • Providing support and timely, specific feedback and recognition to staff.
  • Providing fair and consistent delivery of positive discipline.
  • Developing and maintaining relationships with hosts, guests, local community members, industry peers, and vendors.
  • Developing Food and Beverage policies and procedures.
  • Responding to inquiries from various departments, guests, and other sources.
  • Maintaining ServSafe Food Protection Manager, Allertrain Allergen Awareness, and TiPS Alcohol Safety Training certifications.
  • Participating in the resorts’ Manager on Duty Program.
