About The Position

Under the direction of the Chief Business Official, this role plans, organizes, controls, and directs Child Nutrition Service operations and activities. This includes the preparation, cooking, baking, serving, distribution, and selling of food items to meet student needs. The position monitors and controls nutrition services program planning, resource allocation, and design of food service facilities. It also coordinates personnel, communications, and record-keeping functions to meet food service needs and ensure smooth and efficient Department activities. The Director supervises and evaluates assigned personnel and ensures compliance with District, State, and Federal requirements while providing healthy and nutritious meals for students.

Requirements

  • Possession of a Bachelor's degree from an accredited college/university in a major related to food and nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts, business, or related field.
  • OR Bachelor's degree in any academic major with at least five years' experience in the management of school nutrition programs.
  • Five (5) years of experience in the management of school nutrition programs California Public Schools or other related field is preferred.
  • Any combination of training and experience that would likely provide the desired knowledge and abilities.
  • Knowledge Of: Procedures, methods, techniques, and equipment used in the preparation, cooking, and serving of large quantities of food, including quality and portion control.
  • Commercial and commodity purchasing and procurement principles and procedures.
  • District Child Nutrition programs, operations, and activities.
  • Recipe and Menu Development, student taste testing, and creative culinary direction of different ethnic cuisines served to students.
  • Nutrition, food values, food combinations, economical substitutions, and menu planning.
  • Use and care of manual and mechanical food processing equipment.
  • Commercial kitchen equipment, utensils, and measurements.
  • National School Breakfast and Lunch Program, After School Snack Program, Summer Food Program, and Child Adult Care Food Supper Program.
  • Effective practices in Nutrition Education and Student Wellness program.

Responsibilities

  • Collaborates with District Leadership and site administrators regarding cafeteria needs and student meal participation for the purpose of implementing and maintaining services and/or programs.
  • Compiles daily meal participation data; prepares and files monthly Claim for Reimbursement with the California Department of Education.
  • Plans, organizes, controls, and directs the operations and activities of the Child Nutrition programs and school cafeterias, including policy and procedure development, nutrition, sanitation, purchasing, safety, meal service, and accounting functions; monitors and visits sites for compliance with applicable laws, codes, rules, and regulations.
  • Trains, supervises, and evaluates the performance of assigned staff; interviews and selects employees and recommends transfers, reassignment, termination, and disciplinary actions.
  • Develops and maintains high standards of food preparation and service with an emphasis on customer appeal, customer service, food safety, nutrition standards, meal program requirements, and financial position.
  • Manages semi-annual and multi-year Child Nutrition audits initiated by local, state and federal agencies, including serving as lead point of contact with visiting officials and assuming ownership of all Child Nutrition processes and procedures examined in audit processes.
  • Directs the preparation and maintenance of a variety of records, reports, and other documents related to Child Nutrition Services, personnel, finances, and inventory; develops and meets departmental goals and plans based on District priorities; develops marketing plans to increase participation in the meal program.
  • Develops and prepares the annual preliminary budgets for the Food & Nutrition Services Department; analyzes and reviews budgetary and financial data; controls and authorizes expenditures in accordance with established limitations.
  • Assures sound fiscal management practices; evaluates financial forecasts and analyzes food and labor costs to assure efficient and cost-effective operations; recommends adjustments in meal pricing and determines supplemental sales prices using cost data and income and expense projections.
  • Determines standards for efficient and sanitary practices in food preparation and service; directs the inspection of food served for quality standards; plans for proper storage and economical use of food and supplies to minimize waste.
  • Develops and implements long and short-term goals and activities designed to develop assigned programs and services; administers the Food & Nutrition Services employee training programs; operates and maintains commercial kitchen equipment and utensils.
  • Represents the District and the CNS Department at a variety of meetings, seminars, and conferences; conducts in-service meetings with staff.
  • Collaborates with and presents to parents and the community about the Child Nutrition program; communicates with administrators, District personnel and others to coordinate activities.
  • Plans, develops, prepares and evaluates menus for the Child Nutrition program, testing ingredients, procedures, and products; trains staff on preparation and service of successful products; plans and oversees catered events.
  • Analyzes and determines the need for types and quantities of food, supplies and equipment; meets with manufacturers, brokers and vendors; attends conferences and food shows; directs and coordinates the procurement of food, supplies and equipment; develops and reviews bids for purchase of food, supplies and equipment; recommends contracts for Board approval.
  • Provides technical expertise, information, and assistance to the CNS Supervisors/Leads, the Director, Fiscal services, and/or Chief Business Officer regarding assigned functions; advises superiors of unusual trends or problems and recommends appropriate corrective action.
  • Evaluates and projects facility and equipment needs; plans kitchen layouts during construction and remodeling projects.
  • Performs related duties as assigned.
